This is what I do at the end of a long week. When I have not had time for the weekly shopping, the fridge is filled with random ingredients from a couple of different meals over the last couple of days.
I do not want to spend a long time in the kitchen when I am tired so I throw together whatever I can and call it a meal. Luckily this casserole is one that is really awesome!
My family was screaming for more the first time I made this. I did not have the heart to tell them it was leftovers.
Basically, this is a budget friendly meal that will work for parties, celebrations, picnics, or potlucks, as well as a family meal. Even with pasta, this can be considered a healthy meal. The kidney beans help that aspect. The flavor is Taco Tuesday, without the tortillas. A perfect way to end a busy week.
Can I use Chili Powder if I do not have any Taco Seasoning?
There is a recipe available for homemade seasoning if you happen to be out of the packets. I actually prefer making my own seasoning since the first time I tasted it. The flavor has a better punch to it.
What type of pasta should I use?
Again, this is a recipe for those times, when you have not had time to hit the store. I used egg noodles. However, any form of pasta that you have is quite capable of working in this recipe.
Which cheese do you use to melt so smoothly?
I tend to use Cheddar cheese for most recipes. However, you could use a canned nacho cheese if that works for you, or even use a box of Velveeta and cut it into smaller cubes.
Ingredients:
1 pound ground beef, lean
15 ounce can of Sweet Corn, drained
3 ½ cups Egg Noodles, cooked
¼ cup Black Olives
1/4 cup Taco Sauce
15 ounce can Kidney beans, drained and rinsed
1 pkt Taco Seasoning
½ cup Tomato Sauce
1 cup Salsa
1 cup Cheddar Cheese, shredded
How to make the “Throw Together Mexican Casserole”:
Step 1. Preheat the oven to 350*
Step 2. Spray a 9×13 baking dish with cooking spray
Step 3. In a skillet over medium high heat, crumble and brown the ground beef
Step 4. Drain any excess grease from the pan
Step 5. Cook the egg noodles according to package directions
Step 6. Drain and rinse the pasta
Step 7 To the ground beef add in the Taco seasoning, Taco Sauce, salsa, corn, olives, kidney beans and tomato sauce.
Step 8. Stir to combine and blend well
Step 9. Add the cooked pasta to the meat mix and stir to combine
Step 10. Spoon the pasta and meat mixture into the baking dish
Step 11. Sprinkle the cheddar Cheese over the top
Step 12. Bake for 30 minutes and sprinkle the top with green onions for a garnish
