
I’m a fan of no bake cheesecakes because…. well… they’re a lot more simple than the baking ones! I mean… it takes 10 minutes to whip this baby up and it only needs a couple hours to chill before you enjoy! Not going to lie though, I didn’t let it chill before I dug into it!

Typically, you’ll find a gingersnap cookie crust on your eggnog cheesecakes, but I didn’t have any of those around so I went with the old faithful graham cracker crusted. I spiced it up though with ground ginger and nutmeg to accommodate the eggnog just as a gingersnap does.

Do you know what that means?! Now you don’t have to go to the store and pick up the cookies that you’re probably only going to use for the crust anyway. Use those graham crackers that you already have in the cupboard!

- Spiced Graham Cracker Crust
- 1 3/4 cup graham cracker crumbs
- 4 tablespoons butter, melted
- 1/4 cup sugar
- 1/8 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- Eggnog Filling
- 24 ounces cream cheese, softened
- 1/2 cup sugar
- 1/3 cup eggnog
Instructions:
- In a small bowl, combine all crust ingredients.
- Sprinkle in the bottom of the containers you’re serving in (reserve a few tablespoon to add as garnish on the top).
- For the filling, in a mixer, cream the cream cheese until smooth.
- Add the sugar, mixing thoroughly.
- Mix in eggnog.
- Spoon mixture over crumbs.
- Refrigerate at least 2 hours.
- Serve!
