Lentil Salad
Ingredients
- 1 C. Lentils uncooked
- 1 English cucumber finely diced
- 1 small red onion finely diced
- ¾ C. Loosely packed mint leaves chopped well
- ½ C. Diced sun-dried tomatoes
For the dressing:
- 3 Tbsp. Olive oil
- 2 Tbsp. Fresh lemon juice
- 1 tsp. Minced garlic
- 1 tsp. Dijon mustard
- ¼ tsp. Pepper
- ¼ tsp. Salt
Instructions
- Place the lentils and 3 cups of water in a saucepan on the stove. Bring to a boil, reduce to a simmer and cook until the lentils become tender, 20-25 minutes.
- Drain and rinse the lentils in cold water, and then chill in the fridge until cold.
- Mix together the cold lentils, cucumber, red onion, mint leaves and sun dried tomatoes in a large mixing bowl until combined.
- In a small bowl, whisk together the ingredients for the dressing.
- Pour the dressing over the lentil mixture and stir to combine before serving chilled.
