Years ago I always wondered why my mother made such a large batch of Hamburger Goulash. She once told me that if there were any leftovers, she would turn it into soup for another meal. I laughed at that and never questioned it.
Now that I am an adult, and attempting to feed a family without breaking the bank, I do actually understand her motives. That is not what this recipe is. However, I will not lie, I did use Mom’s Goulash to base this soup on.
We believe that when fall hits and we see the leaves turning color, the weather gets chilly, it is time that we want to make soups.

Could I make this in my Crock pot?
Definitely, all that you would need to do is to brown the meat prior to placing it in the crock pot. The soup is normally cooked on a higher temperature, however, it can be set on low heat to cook all day.
Could I use a different type of meat for this soup?
You could substitute ground Sausage, chicken or Turkey in place of ground beef. Use any type of meat that makes you happy to be eating it.
How can I make this a vegetarian meal?
First, you would want to eliminate the meat in the recipe. Also change the broth to vegetable broth. This will leave it as a vegetarian dish.
Ingredients:
1 cup Yellow Onion, chopped
1 cup Celery, chopped
1 cup Carrots, sliced
1 bag Frozen Corn
1 pound Ground Beef
5 cups Beef Broth
16 ounces Diced Tomatoes
8 ounces Tomato Sauce
4 tbsp Ketchup
1 tsp Basil
½ tsp Oregano
½ tsp Salt
¼ Black Pepper
How to make this Hamburger Casserole:
Step 1. In a large skillet, crumble and brown the ground beef
Step 2. Drain the excess grease
Step 3. Add the Beef Broth
Step 4. Then add the corn, carrots, celery, onions, diced tomatoes, Spices ketchup, tomato sauce and the Beef Broth
Step 5. Reduce the heat to a simmer and let the soup cook for 1 ½ hour to 2 hours.
