You know those days when you work late, still have to pick the kids up from activities, stop at the store for milk, and then you recall that you forgot to plan for dinner, you did not take anything from the freezer.
You run through your mental recipe box for a quick meal with very little work involved.
Then you remember you made a dish a few weeks ago that you really want to make again. Steak with garlic and herb potatoes. It is a simple dish, takes just a small amount of work and tastes super delicious.
This is the perfect meal to make on these days. It is somewhat versatile, only as far as you want to go with it. I always add some steamed Pearl Onions with mine.
What side should I pair with this dish?
Think of the fancy restaurants, they generally offer a side salad or a soup. I prefer to make a nice garden salad filled with all types of colors.
What cut of steak is best used for this dish?
That is a tough one to answer. A lot will depend on the steak you prefer, what the cost is and what is available by the time you get to the store after work. I will generally use New York Strip Steak or a Ribeye steak. They are both tender and perfectly flavored.
Can I keep the leftovers?
Of course you can! Be sure the food has cooled completely and then place it into an airtight container and in the refrigerator for up to 4 days.
Can I freeze the leftovers?
You can freeze this dish, it will be good in the freezer for up to 3 months. Just be sure that it is placed into an airtight container.
Ingredients:
1 tbsp Olive Oil
1 pound Baby Golden potatoes, cut in quarters
5 pounds New York Strip Steak, cut into strips
2 tbsp Butter
1 tsp Thyme
1 tsp Oregano
1 tsp Rosemary
3 Garlic Cloves, minced
½ Salt
¼ black pepper
HOW TO MAKE Garlic Herb Potatoes and Steak Skillet:
Step 1. In a skillet over medium high heat, melt 1 tbsp butter and add in the Olive Oil
Step 2. Add in the quartered Potatoes along with the herbs
Step 3. Cover the skillet and cook for 3 to 5 minutes, stirring often. Potatoes should be fork tender
Step 4. Remove the potatoes and set to the side
Step 5. In the same skillet, add the remaining butter and let it melt
Step 6. Slice the steaks into thin strips
Step 7. Add the steaks to the butter and cook
Step 8. Stir once or twice until meat reaches desired doneness
Step 9. Add the potatoes back in the skillet and heat through
Step 10. Season with Salt and Pepper, if desired
