If the truth was known, we would all understand why this was called John Wayne Casserole. From what I see when researching, John Wayne was a believer of hearty food, this is certainly a hearty casserole. However, he apparently was not thrilled about some of the ingredients. So, the reasoning baffles me.
Yet, I swear this is a truly wonderful savory and delicious casserole that I am keeping on the top of my list for different functions that we attend that we pitch in a buffet dish for.
This casserole is somewhat unique, in that the biscuits are not on the top of the casserole, but rather on the bottom and this makes it different, but really satisfying.
This dish is loaded with onions, tomatoes, peppers and cheese along with the ground beef and biscuits. This meal would satisfy a hardworking ranch hand, so you know it will keep your family full.
What makes this recipe so special?
There is such simplicity to this recipe that it is hard to understand why it is so good. Of course, implementing shortcuts is key to the ease of making this casserole. Great flavor, filling, hearty, and easy are the only reasons I need to know that this is one really special dish.
What type of biscuits should I use?
The choice is really up to you. I used Pillsbury large, flaky Grands. However, it really is not going to make a difference. The biscuits are buried under all the goodness in this dish.However, the recipe calls for Bisquick biscuits, these are so tasty and work perfectly in this meal.
Can I freeze what is leftover after dinner?
You can certainly put it into an airtight and freezer safe container and place it in the freezer for up to 3 months. Just be warned, you may not have any remaining.
How long will this casserole stay fresh in the refrigerator?
Wrapped tightly, the casserole will be fresh for up to 4 days. Simply reheat in a low temp oven or in the microwave to desired temp.
Ingredients:
2 pounds Ground Beef, lean
2 cups Bisquick Biscuit Mix
1 cup water
1 pkt Taco Seasoning mix
¾ cup water
½ cup Sour Cream
¼ to ½ cup mayonnaise
1 large Yellow Onion, diced
1 Green Bell Pepper, diced
1 large Beefsteak tomato, diced( I used Romas)
4 ounces Green Chilis, diced
1 cup Cheddar Cheese, shredded
How to make this John Wayne Casserole:
Step 1. Preheat the oven to 350*
Step 2. Spray a 9×13 baking pan with non stick spray
Step 3. In a mixing bowl, combine the bisquick Biscuit mix and 1 cup of water and stir to blend well
Step 4. In a skillet over medium high heat, crumble the ground beef and cook thoroughly
Step 5. Drain the grease from the meat
Step 6. Stir in the taco seasoning and ¾ cup of water, stir to blend
Step 7. Reduce the heat to a simmer and simmer for 5 minutes
Step 8. In a bowl combine the mayonnaise, sour cream half of the diced onion and ½ cup of Cheddar Cheese, stir to blend well
Step 9. Press the biscuit dough in the bottom of the prepared pan, be sure to go up about ½ inch on all sides with the dough
Step 10. Layer the ground beef on top of the biscuit dough
Step 11. Top the meat with the diced tomatoes
Step 12. Add the bell pepper and the remaining onion to the skillet to saute until soft
Step 13. Add in the green chilis
Step 14. Layer these on top of the diced tomato
Step 15. Next spread the sour cream mixture over the top as evenly as possible
Step 16. Top with the remaining cheddar Cheese
Step 17. Bake for 35 minutes, until the edges are browned
Step 18. Remove from the oven and let sit for 5 minutes
Step 19. Serve with Sour Cream, Salsa or Guacamole
