This dish is the one that we all shake our heads about and wonder why we did not come up with this a long time ago? It is simply because we all love those tacos so darn much we do not think ahead. Admittedly, I was making a dish similar to this, but I always called it Nachos.
This is basically the same dish, just a different name and I am sure there are one or two ingredients or directions done differently that what I had originally done.
However, let me say, I was thankful when I came home and saw that it was a familiar meal for dinner, but shocked when I saw that it was put together differently than I would normally do. I am not complaining though, I absolutely love this casserole and I am betting that you will too!
This is the same Taco dish that you would normally eat on Taco night, however it just looks slightly different. The flavor is there, the toppings are there and you can add any other toppings that you would like to add.
Can I use a different type of meat?
So many people ask this. For me, a recipe is just a base, go ahead and play with it until you are happy with the dish. If that means changing the meat to Chicken or Turkey, Sausage or Bison, go ahead.
Does the brand of Chips make a difference?
Absolutely not! We have made this casserole with numerous brands and numerous flavors. Personally, I do prefer a Nacho Cheese Chip, but the brand makes no difference.
Do I have to stir the Cream Cheese in the meat mix?
The meat will be dry and crumble if it does not have the Cream Cheese in it. I have heard of people using Salsa alone versus the Cream Cheese and Salsa combination. That too, is a matter of taste.
Can I use Guacamole with this dish?
If you want to top your plate of Taco Casserole with Guacamole, feel free. Any toppings that are normally used in your household should be used with this dish.
Ingredients:
1 cup Onion, chopped
1 packet Taco Seasoning
3 ounces Cream Cheese
1 small can Green chilis
2 to 3 cups Frito Corn Chips
1 ½ pounds Ground Beef
1 cup Taco Cheese Blend, shredded
2 Roma Tomatoes, chopped
2 cups Lettuce, shredded
Sour Cream and Salsa for a Garnish or topping
How to make Walking Taco Casserole:
Step 1. Preheat the oven to 350*
Step 2. In a skillet over medium high heat, add the ground beef and onion and cook until the beef is done thoroughly.
Step 3. Drain excess grease
Step 4. Add in the drained Green Chilis
Step 5. Stir in the Cream Cheese
Step 6. Saute until the Cream Cheese has melted and is combined when stirred
Step 7. Spoon the meat mixture into a baking dish
Step 8. Top with the Corn Chips and then the shredded Cheese
Step 9. Put in the oven and bake for 20 minutes
Step 10. Remove from the oven and top with Shredded lettuce and chopped tomato
Step 11. If desired, top with Salsa and Sour Cream
