This is a rather fun dish to make for the family. It seems to have a bit of everything in it, and I hear there are similar recipes called Garbage Can Dinner and other names such as that. I will stick with Shipwreck as it does not sound unsavory.
However, it is easily explained. Originally, this meal was made when it was time to clean out the refrigerator and use up the small amounts of leftovers that were left from the last couple of evening meals.
To explain it better, Shipwreck dinner is a meal made in one pan. It does not necessarily have to be the leftovers from dinner this week, as you will see. This dinner is also very quick to prepare and has very little clean up involved.
The amount of time it takes is not much more than opening the cans of ingredients and cooking your ground beef.
Why is it called Shipwreck Dinner?
It is a play on words meaning that you eat what is available. However, it does not need to be leftovers. This dish is made with ingredients that are not leftover from a previous meal.
The recipe lists frozen vegetables, can I use canned?
You could use canned. The frozen vegetables taste fresher and give the dinner a better flavor. You could also use fresh if you have them available.
Could I add additional vegetables?
You certainly could. Vegetables like broccoli, cauliflower, green beans can be added and will give the dinner another layer of flavor.
Could I use Italian Sausage in this meal?
If you want to change from Ground Beef to Italian Sausage, that is a great switch and will taste phenomenal.
What can I serve as a side dish?
This dish has vegetables in the recipe, along with meat and carbohydrates. Technically this is a complete meal. You could serve a side salad or additional steamed or roasted vegetables. A mixed fruit salad would be a great dish to serve along with a Shipwreck Dinner.
Ingredients:
1 box Macaroni and Cheese mix
1 pound Ground beef
1 can Tomatoes, diced and undrained
1 cup Peas, frozen
1 cup Corn, frozen
1 cup Milk, 2% or whole
1 cup Cheese, Cheddar, shredded
HOW TO MAKE SHIPWRECK DINNER :
Step 1. In a skillet over medium high heat, crumble and brown the ground beef until it is thoroughly cooked
Step 2. Drain the fat from the skillet
Step 3. Sprinkle in the cheese powder from the Macaroni and Cheese box
Step 4. Add in the macaroni from the Macaroni and Cheese box
Step 5. Stir to combine
Step 6. Add in the diced tomatoes and juice, milk, frozen peas and corn
Step 7. Cover the skillet, bring to a boil
Step 8. Reduce heat as soon as the mix reaches a boil
Step 9. Simmer for 12 to 15 minutes or until the noodles are tender and liquid is absorbed
Step 10. Top with the shredded Cheese, cover and simmer a few minutes longer until the cheese is melted
Step 11.Serve and enjoy!
