These cookies have so many names, so many variations that it could be considered scary. One of the most common names these cookies are known by are Russian Tea Cookies or Wedding Cookies.
No matter what they are called, the flavor is unbelievable. These cookies literally melt in your mouth. With a touch of Confectioner’s Sugar on the outside of the cookies, and a small amount of Confectioner’s Sugar in the dough, that is all the sweetness that is needed for these.
These cookies are a great way to get the kids involved with helping to make these cookies. It makes for great memories and fun times. The cookies are basically a simple shortbread cookie and have pecans added to the dough.
The dough is simply rolled into consistent and similar sizes and baked. Once cooled, they are rolled into Confectioner’s Sugar.
Can I use a different type of nut in the cookies?
I know there have been some who have chosen to use walnuts. Personally, I favor the pecans over the walnuts.
Can I make these as flat cookies?
The dough is a crumbly type of dough. It may be somewhat difficult to flatten the cookies even slightly.
Do I have to refrigerate these cookies?
No, the cookies will be fine if you leave the cookies in an airtight container on the counter. They can be kept in the refrigerator if you would like to. They do still need to be kept in an airtight container.
Ingredients:
½ cup Confectioners Sugar
2 ¼ cups Flour
2 sticks Butter, unsalted, at room temperature
⅛ tsp salt
2 tsp Vanilla Extract
1 cup Pecans, chopped
1 cup Confectioners Sugar
HOW TO MAKE PECAN BUTTER SNOWBALL COOKIES:
Step 1. Preheat the oven to 350*
Step 2. In a mixing bowl combine ½ cup Confectioners Sugar and 2 sticks butter, beat together until smooth
Step 3. Mix in the salt, flour, Vanilla extract and pecans
Step 4. Blend well
Step 5. Form the dough into Almond sized balls and place on a baking tray lined with parchment paper
Step 6. Bake for 12 minutes and let sit until the cookies reach room temperature
Step 7. Place the 1 cup of Confectioners Sugar into a bowl
Step 8. Roll the cookies in the Confectioners Sugar before serving
