Taco Tuesday no longer means simple tacos. Mexican Taco Lasagna is not difficult to make and it tastes so good, not too spicy and a great new way to eat Mexican. Lasagna has always been a favorite in my house.
So when I decided I was tired of the same old food on Taco night, I knew this was the way to try a unique meal.
I also knew that I did not want to use pasta of any type for this dish. I grabbed what was the common ingredient for Mexican food. Soft Tortillas is what was needed for this dish.
The remaining ingredients were just a simple list of what we normally use as toppings for tacos or other Mexican meals.
What type of tortilla should I use?
I use Flour tortillas as they seem to work best for me in this dish. I have a sister who prefers to use corn tortillas. You could try both and see which you prefer.
Is there a certain Salsa that is recommended?
With so many types of salsa out on the market, the choice is ultimately yours. There is green, there is red, there is store bought and homemade. There are spicy and then not so spicy versions.
What makes this a special recipe to keep?
This dish is unique, it will stave off the boredom that strikes when the family eats the same meals so often. As they say Variety is the spice of life. This dish is also versatile, you can vary the spiciness, you can change the type of meat and the salsa.
How do I store what is leftover?
When the food has cooled completely, it can be placed into an airtight container and then into the refrigerator. You could also wrap the dish with plastic wrap or Aluminum foil. It can be kept in the refrigerator for up to 3 or 4 days.
Can I freeze the leftovers?
You could place the leftover food into a freezer safe container and then place it in the freezer for up to 3 months.
Ingredients:
1 pound Ground Beef, 90/10 if you can find it
1 pkg Taco Seasoning
14 ounces Tomatoes, diced with the juice
10 Flour or Corn tortillas, I used flour
1 cup Salsa, your choice of brand and flavor
1 ½ cups Mexican Style Cheese, shredded
How to make Mexican Taco Lasagna:
Step 1. Preheat the oven to 350*
Step 2. In a skillet over medium high heat, crumble the ground beef and cook until no longer pink.
Step 3. Drain the grease from the skillet
Step 4. Add in the taco seasoning and tomatoes.
Step 5. Stir to combine well
Step 6. Lightly spray a 9×13 baking pan with non-stick spray
Step 7. Place half of the tortillas in the bottom of the pan, they will overlap some
Step 8. Spoon the ground beef onto the layer of tortillas
Step 9. Top with the other half of the tortillas
Step 10. Spread salsa over the top layer of tortillas
Step 11. Sprinkle with the shredded cheesePlace on the center rack in the oven and bake for 25 to 30 minutes, until the cheese is melted and bubbly
Step 12. Remove from the oven and serve hot
Step 13. Top with your choice of toppings, this could be sour cream, salsa, lettuce, tomatoes, olives or just more cheese.
