The best flavored cheese in the world comes from those fancy Mexican restaurants. I absolutely love the creaminess, the smooth texture and the flavor of the white cheese Sauce I get on every order when we eat out. However, like all of you, it is not very economical to purposely go to a restaurant and spend money to get my favorite sauce.
This recipe is the closest I can get to the authentic flavor of Restaurant Style Cheese Sauce. It is actually quite easy to make, and does not take too many ingredients to obtain this perfect balance of flavors. Go ahead, try this one out, you are going to love it!
Cheese sauce can be used for chips, as a sauce on meat or vegetables, or if like me, you eat it by the spoonful. I have actually used this sauce as a base when I make broccoli and cheese, cauliflower and cheese soups.
It is very versatile and you are going to find new ways to use the cheese sauce everytime.
Can I use this Cheese Sauce as a dip for chips or vegetables?
You certainly can! This recipe is perfect to use as a dip, or for the main course. You could even serve it as part of an appetizer.
Can I use a cheese other than American to get the same taste?
The only requirement for the cheese is to make sure it is a cheese that melts smoothly without burning. As for which flavor, that is your choice. You could use one that is flavored with jalapenos as long as it melts smoothly without burning.
How long will I be able to store the cheese sauce in the refrigerator?
Keep the cheese sauce covered tightly and you can keep it for up to 3 or 4 days. To reheat it, place it in the slow cooker to warm slowly or microwave in bursts of 15 seconds each.
Ingredients:
1 pound American Cheese, white and sliced. I find mine in the local Deli
⅔ cup whole milk
4 tbsp green chilis (I have used a can of Rotel diced tomatoes with green chilis, drain it first and then add)
½ tsp Cumin
1 tsp Chipotle seasoning (optional)(I have used Taco seasoning)
HOW TO MAKE MEXICAN RESTAURANT CHEESE
Step 1. Lightly spray the crock pot with non stick spray
Step 2. Layer the Cheese slices in the bottom of the Crock pot
Step 3. Add in the cumin, green chilis, Chipotle Seasoning and the milk
Step 4. Turn the heat to low, cover the Crock pot and cook for 1 to 2 hours
Step 5. Stir to combine the ingredients completely and melt any cheese that remains
Step 6. Serve and Enjoy!
