MEXICAN-CHIPOTLE CHICKEN CASSEROLE is perfect for any occasion and can be eaten a few different ways.
It’s a healthy option to bring to a cookout as the winter months are ahead. And so easy to throw together with not a ton of ingredients or time spent in the kitchen. Spending less time in the kitchen and more time with family is always the better way to go.

WHAT INGREDIENTS YOU NEED TO MAKE THIS MEXICAN-CHIPOTLE CHICKEN CASSEROLE:
medium (skinless and boneless) chicken breasts
cans chopped tomatoes
Tbsp cajun seasoning
½ tsp chipotle paste
Tbsp ground cumin
can (14.5 oz) black beans (drained and rinsed)
can (14.5 oz) pinto beans (drained and rinsed)
can (14 oz) sweet corn
Tbsp greek Yogurt (fat free)
HOW TO MAKE THIS MEXICAN-CHIPOTLE CHICKEN CASSEROLE:
Step 1. Preheat oven to 400 degrees.
Step 2. Prep casserole dish with nonstick baking spray.
Step 3. In a large bowl combine the tomatoes, black beans, pinto beans. sweet corn.
Step 4. Stir to blend well.
Step 5. Add the chipotle paste, cumin, and chipotle seasonings to the ingredients in the large bowl.
Step 6. Stir well to mix.
Step 7. Spread a layer (½ of the vegetables in the bowl.) on the casserole dish.
Step 8. Add the chicken on top of the vegetables.
Step 9. Add the remaining vegetable mixture on top of the chicken breasts.
Step 10. Cover the casserole with foil.
Step 11. Bake at 400 degrees for 20 minutes.
Step 12. Remove the foil from the top of the casserole.
Step 13. Stir to mix the remaining vegetables.
Step 14. Remove the foil cover.
Step 15. Stir then return the baking dish to the oven at 400 degrees for about another 15+ minutes.
Step 16. (Check to make sure the chicken is done,)
Step 17. Remove from the oven.
Step 18. Garnish with a tablespoon of yogurt before serving.
