Do I have to add peas in the meat mixture?
No, it is not mandatory to add peas. If you choose, you could add corn, green beans or even chili beans or black beans. The beans will make a whole new layer of flavor.
Could I use Seasoned Mashed Potatoes?
Yes, if you have a flavor such as Garlic and Cheese that you love making, please use that flavor.
How do I store this dish?
Once the food has cooled to room temperature, you can place it in an airtight container and then place it into the refrigerator. The meatloaf with mashed potatoes and cheese will stay fresh in the refrigerator for up to 3 days.
Can I freeze the Meatloaf with Mashed potatoes and cheese?
Be sure to wrap the meatloaf tightly or place it in an airtight container and then into the freezer. The meatloaf can last in the freezer for 2 months.
Ingredients:
¾ cup Seasoned Breadcrumbs
1 ½ pounds Ground Beef, lean
1 onion, diced (I used a yellow onion)
3 tsp Garlic, freshly minced
1 Egg
¼ cup BBQ Sauce
¼ cup Tomato Sauce
½ cup Peas, frozen
1 tsp Salt
½ tsp Black Pepper
¼ cup Parsley, chopped
Potatoes:
1 ½ pounds potatoes, peeled and quartered, ( I used Red potatoes)
¼ cup Heavy Whipping Cream
4 tbsp Butter
1 cup Cheddar Cheese, shredded
How to make this Meatloaf with Mashed Potatoes and Cheese:
Step 1. Preheat the oven to 400*
Step 2. In a skillet over medium heat, add the oil and saute the onions until the are soft and translucent
Step 3. Stir in the garlic and saute another 30 seconds
Step 4. Remove the skillet from the heat and set to the side to cool
Step 5. Once the onions have cooled, you can continue on
Step 6. Boil the potatoes until fork tender and drain
Step 7. In a mixing bowl combine the ground beef, egg, breadcrumbs, tomato Sauce and BBQ, along with the salt, pepper and parsley
Step 8. Knead with your hands until completely mixed together
Step 9. Fold in the frozen peas
Step 10. Form the meat mixture into a loaf shaped log,
Step 11. Place the meat into a baking pan
Step 12. Bake for 30 minutes
Step 13. While the meat is cooking blend the potatoes with the butter, heavy whipping cream Remove the meatloaf from the oven
Step 14. Spread the mashed potatoes over the top of the meatloaf and sprinkle the Cheddar Cheese on the potatoes
Step 15. Return to the oven and bake for an additional 5 minutes.
