This dish is perfect on its own or can be served with a loaf of crusty bread.
What is Ditalini pasta?
It is a type of pasta that is shaped like small tubes, they are not very large but they will hold some of the wonderful broth of this soup. This could be substituted if you can not find Ditalini at your local market.

How do I store this soup?
The soup can be placed into an airtight container once it has cooled. You can then place the container into the refrigerator for up to 5 days.
Can this soup be frozen?
The soup can be frozen after it has been cooled. Some would say to leave the heavy cream out until it is time to serve the soup. However, I believe it will taste just as wonderful once it thaws and is stirred to combine.
Could Turkey be used in place of Chicken?
You could certainly use Turkey in this soup. This would be a great way to use leftover Turkey after the Holidays.
Ingredients:
2 cups Chicken, cooked and cubed or shredded
8 ounces Ditalini Pasta
4 cups Chicken Stock or Chicken Broth
1 tbsp Oil
1 Bell Pepper, Orange, seeded and diced
½ White Onion, diced
2 stalks Celery, sliced and diced
2 cans Petite Diced Tomatoes, (15 ounce cans), Do Not Drain
1 jalapeno pepper, seeded and diced
1 cup heavy cream
1 cup water
½ tsp Salt
¼ tsp black Pepper
1 tsp Basil, dried
1 tsp Oregano, dried
HOW TO MAKE ITALIAN CHICKEN SOUP:
Step 1. Cook the pasta according to package directions, to Al dente stage
Step 2. Drain and rinse the pasta, set aside
Step 3. In a Dutch oven, add the Oil and heat over medium high heat
Step 4. Add in the onion, celery, jalapeno and orange pepper
Step 5. Saute until tender
Step 6. To the Dutch oven, add in the chicken, the broth, water, tomatoes with the juice,
Step 7. Stir in the herbs and salt and pepper
Step 8. Bring to a boil, then reduce heat and simmer for 20 minutes
Step 9. Stir in the pasta
Step 10. Add the heavy cream and stir to combine
Step 11. Serve hot with crusty slices of bread or rolls
