Ingredients needed:
Chickpeas
Bell pepper
Tomatoes
Cucumber
Feta cheese crumbles
Avocado
Red wine vinegar
Extra virgin olive oil
Fresh squeezed lemon juice
Minced garlic
Fresh parsley
Dried crushed oregano
Sea salt
Fresh grated black pepper
Fresh dill
How to make this Skinny Greek Chickpea Salad:
Step 1. Using a strainer drain and rinse the chickpeas.
Step 2. Add the bell pepper, tomatoes, and cucumber in a large bowl.
Step 3. Toss together.
Step 4. In a small bowl add the red wine vinegar, olive oil, lemon juice, minced garlic, parsley, oregano, salt, pepper, and fresh dill. Whisk to mix well.
Step 5. Pour the dressing over the salad.
Step 6. Add chickpeas and Stir well.
Step 7. Cover the bowl and put it in the refrigerator for a couple of hours.
Step 8. Shake the salad in the covered bowl to remix the dressing.
Step 9. Right before serving, toss in the feta cheese and chopped avocado.

- 2 C yellow bell pepper (chopped)
- 1 C tomatoes (chopped)
- 1 C cucumber (chopped)
- 1 C feta cheese crumbles
- 1 avocado (peel, pit, and chop)
Dressing Ingredients:
- 2 ½ Tbsp red wine vinegar
- 3 Tbsp extra virgin olive oil
- 3 tsp fresh squeezed lemon juice
- 1 ½ tsp minced garlic
- 1 tsp fresh parsley
- ½ tsp dried crushed oregano
- ½ tsp sea salt
- ¼ tsp fresh grated black pepper
- ¼ tsp fresh dill
