
Gingerbread Cookie Bars with Eggnog Frosting have the same great flavor as the classic cookie, just with more ease!
I am a huge fan of soft, chewy gingerbread cookies during the winter and this year I wanted to turn them into bars! Boy, was that a great idea. C, even thinks they’re amazing and he doesn’t eat a lot “gingerbread” things. I know they get a big ol’ gold star if he highly enjoys them!

Seriously though… these bars contain the same ingredients as cookies, except they’re much easier as you just press them into the bottom of a 9×13 and bake… then once they’re cool… slap on the eggnog buttercream… I don’t know what heaven tastes like, but these might be pretty close! Just saying…
So enough with me talking… lets get to it….
- 1/2 cup butter, softened
- 3/4 cup white sugar
- 1/4 cup brown sugar
- 1/2 teaspoon vanilla
- 1/3 cup molasses
- 1 egg
- 2 cups all-purpose flour
- 2 teaspoons baking soda
- 1 tablespoon cinnamon
- 1/2 teaspoon ground ginger
- 1/2 teaspoon salt
- 1/4 teaspoon ground cloves
- 1/4 teaspoon nutmeg
- Eggnog Buttercream Frosting
- 8 ounces cream cheese
- 1/4 cup butter, softened
- 2-3 cups powdered sugar
- 1-3 teaspoons eggnog (depending on desired consistency)
- Preheat oven to 350*F and line a 9×13 with wax paper (ease of removal) or grease.
- In a mixing bowl cream together butter and sugars.
- Add vanilla, molasses, and egg, creaming until smooth.
- In a sifter combine remaining ingredients.
- Sift into molasses mixture, mixing until thoroughly combined.
- Press dough into bottom of prepared 9×13 pan.
- Bake at 350*F for 20-25 minutes or until tests done.
- Allow to cool and then frost with Eggnog Buttercream Frosting.
- Serve sprinkled with nutmeg!
- Directions for Frosting
- In a mixer cream together the cream cheese and butter.
- Gradually add powdered sugar.
- Use eggnog to thin to desired consistency. (I used a good tablespoon in mine because I wanted a stronger flavor).
