This sheet cake is the one that Elvis’ mom would make for him all the time. It was a cake that Elvis loved throughout his entire life. The cake is moist with a great pineapple flavor and topped with Pecans.
This cake has been imitated many times, always with some small change made. In order to enjoy the cake that Elvis loved so much, you need to follow the recipe that his Mom used when she made it. The cake is economical and super flavorful.
The cake is quite versatile in that you could use a white cake, yellow cake or even a pineapple cake mix. I am sure there are many versions to the recipe, but this is the one based on the ingredients that Gladys Presley used when making her son’s favorite cake.
The cake is refreshing to eat. It is also topped with a Cream Cheese frosting and more pecans on top. It is so easy to understand why Elvis loved his cake!
Is it best to use a white cake mix?
The only reason it was likely white is because they probably did not have pineapple flavored cake mixes then. When homemade cakes were made, they used a homemade recipe and for those days, white was the easiest and most economical.
Do I have to use Pecans?
Well, the cake does need nuts to be the Elvis Cake. You could use walnuts if you wanted. Pecans are more true to what they had handy then. There were loads of pecan trees everywhere down south.
Should this cake remain in the refrigerator?
In my opinion, all cakes should be refrigerated after cooling down and being frosted. This cake would be okay if it sat on the counter for 24 hours, as long as it is covered.
Can I freeze this cake?
If you need to freeze the cake, do so before adding the frosting. The frosting does not always stay the same texture after thawing. The cake will taste fresher if you wait to frost it.
Ingredients:
1 white Cake mix, PLUS ingredients listed on the back of the box
1 can Pineapple, crushed
½ cup Butter
1 cup sugar8 ounces cream cheese
3 cups Powdered Sugar
1 tsp Vanilla Extract
2 cups Pecans, mostly crushed
HOW TO MAKE THIS ELVIS PRESLEY SHEET CAKE:
Step 1. Preheat the oven to 350*
Step 2. Prepare the cake mix according to the package directions
Step 3. Spray an 11×7 baking tray with a nonstick cooking spray
Step 4. Pour the batter into the prepared pan
Step 5. Place in oven and bake according to the package, or when a toothpick comes out clean when inserted in the center
Step 6. Cool for 5 minutes,
Step 7. Use a wooden spoon to poke holes in the top of the cake at roughly ½ inch spacings
Step 8. Pour the crushed pineapple on top of the cake and smooth out
Step 9. Set the cake aside to allow it to cool completely
Step 10. In a mixing bowl combine the cream cheese, butter, vanilla and beat with an electric mixer until smooth
Step 11. Add the powdered sugar and beat again
Step 12. Stir in the pecans
Step 13. Using an offset spatula spread the frosting over the cake
Step 14. Top with additional Pecans if desired
