Ingredients:
1 bag (30 ounces) Tater Tots, frozen
1 pound Ground Beef, lean
1 tbsp Garlic, freshly minced
1 can Sweet Corn, drained
1 can Black Beans, drained and rinsed
1 Onion, diced
1 can Cream of Mushroom Soup
½ cup milk, whole
¼ cup Sour Cream
2 ½ cups Cheddar Cheese, shredded
How to make Cowboy Casserole:
Step 1. Preheat the oven to 350*
Step 2. Spray a 9×13 baking pan with Cooking Spray
Step 3. In a skillet over medium high heat, crumble and brown the ground beef with the Onion and garlic
Step 4. Cook until the ground beef is no longer pink
Step 5. Drain the excess grease
Step 6. In a bowl combine the Mushroom soup, sour cream and milk
Step 7. Add the soup mix to the ground beef and stir to combine
Step 8. Add in the corn and the black beans, stir to mix well
Step 9. Place a layer of Tater Tots in the bottom of the baking dish in an even layer
Step 10. Spoon half of the meat mixture over the tater tots
Step 11. Top with half of the Cheddar Cheese
Step 12. Repeat the layers beginning with the tater tots
Step 13. Bake for 35 minutes
Step 14. Remove from the oven and let sit for 5 minutes before serving
