This perfect cowboy casserole recipe you need only 40 min to cook it.

WHAT YOU NEED TO THIS CASSEROLE:
beef (extra lean)
Tbsp minced garlic
large yellow onion (chopped)
can (15.25 oz) whole kernel corn (drained)
can (15 oz) black beans (drained)
can mushroom soup (fat free)
cheddar cheese (shredded)
milk ( skim)
sour cream (fat free)
(30 oz) tater tots (frozen)
HOW TO MAKE THIS COBOY CASSEROLE:
Step 1. Preheat the oven to 350 degrees.
Step 2. Prep 9 x 13 in baking dish with nonstick baking spray.
Step 3. Add the chopped onion to a large skillet and minced garlic.
Step 4. Stir to mix.
Step 5. Cook for about 1 minute over medium heat.
Step 6. Drain the fat. Transfer the meat, onion, and minced garlic to a large bowl.
Step 7. Add soup, milk, and sour cream in a small bowl.
Step 8. Stir to mix well.
Step 9. Add the soup mixture to the beef mixture.
Step 10. Stir to blend.
Step 11. Add the corn and black beans. . Mix well.
Step 12. Line the baking dish with a single row of tater tots.
Step 13. Spoon half of the meat mixture over the tater tots.
Step 14. Spread it evenly over the top of the tots.
Step 15. Sprinkle ½ of the cheese on top.
Step 16. Layer the second row of tater tots.
Step 17. Spoon the remaining mixture over this layer of tater tots.
Step 18. Sprinkle the remaining cheese on top.
Step 19. Bake at 350 degrees for 25 to 30 minutes.
Step 20. Set aside to cool slightly before serving.

- ½ C milk ( skim)
- 4 Tbsp sour cream (fat free)
- 1 bag (30 oz) tater tots (frozen)
Instructions
- Preheat the oven to 350 degrees.
