For generations, families were subjected to the same Tuna Salads for picnics or for dinner meals that could be made quickly. This is a salad that can easily replace the old and boring and make dinner new and exciting again.
This terrific Chicken Club Salad with Pasta is perfect for lunch, however it will also work great for a dinner meal. This meal is actually quite tasty and is definitely healthier than not eating lunch at all.
This is a phenomenal dish that combines two long time favorites in our house. This dish can be made quite quickly, if you have all ingredients on hand. Obviously it is always best to make your own Chicken to be sure that it is seasoned the way you like, or not seasoned with anything other than Salt and pepper. You can use Rotisserie Chicken if you want, it is already made and will make this easier to put together.
The pasta could be switched to another shape pasta if you would like. I prefer the spiral pasta as it does hold the dressing so that you get some in each bite.
How long will the salad last?
You can cover the Salad tightly and keep it in the refrigerator for up to 5 days. I do not suggest freezing this salad. It is best when eaten fresh.
Can I double this recipe?
Certainly you can! Be sure to double each ingredient as you put the salad together. The recipe, as is, will make 2 to 3 servings.
Can I use Rotisserie Chicken?
You could use rotisserie, leftover Chicken from a previous meal or Bake a couple of boneless Chicken breasts fresh.
Do I have to use Muenster Cheese?
The flavor of the Muenster will only make this salad even better. However, It would be up to you if you would like to use Cheddar or Mozzarella, or any other flavor.
Ingredients:
8 ounces Spiral shaped Pasta, cooked according to package directions
2 cups, Chicken, cooked and cubed
¾ cup Italian Dressing
¼ cup mayonnaise
1 pound bacon, cooked and crumbled
1 cup celery, chopped
1 cup green pepper, chopped
½ pound Cherry tomatoes, halved
1 cup Muenster Cheese, cubed
How to make Chicken Club Pasta Salad:
Step 1. Boil the pasta according to package directions, drain and rinse, Place in a bowl and set to the side
Step 2. Cut the cooked chicken into cubes
Step 3. Cut the Cheese into cubes
Step 4. Slice and chop the celery and green pepper
Step 5. Cut the Cherry Tomatoes in half
Step 6. In a small bowl combine the Italian dressing and mayonnaise
Step 7. Add the crumbled bacon to the bowl with the pasta
Step 8. Add in the celery and green pepper, along with the chicken, tomatoes and cheese
Step 9. Pour the dressing mix over the top and gently stir to combine.
