Caprese, by itself is a simple yet awe striking combination of mozzarella, tomato and basil, and when it is combined with roasted chicken, there is no level higher.
What is Caprese?
Simply it would be the cheese, tomato and basil. Then you can just put those ingredients on top of a thick chicken breast to get the Italian Chicken Caprese.

Is this a healthy dish?
It really is! Roasted Chicken topped with tomato, mozzarella cheese and basil, then drizzled with a Balsamic glaze. No more than that. Low calorie, low carb and high in taste.
What type of Tomato should be used in Chicken Caprese?
I prefer to use a tomato that is hearty and somewhat large. I generally choose beefsteak tomatoes.
Ingredients:
6 Chicken Breasts
3 Beefsteak Tomatoes
1 block fresh Mozzarella Cheese, cut into slices
2 tbsp Basil, fresh
2 tsp Herbs de Provence
1 cup Balsamic Vinegar
¼ cup Brown Sugar
1 tsp Salt
½ tsp Black Pepper
How To Make This Caprese Chicken Recipe:
Step 1. Preheat the oven to 350*
Step 2. Lightly Spray a baking tray with cooking spray
Step 3. Place the chicken breasts on the baking tray and bake for 15 minutes
Step 4. In a saucepan add 1 cup of Balsamic Vinegar and heat to a boil
Step 5. Add in ¼ cup Brown Sugar
Step 6. Stir and reduce the heat to a simmer, simmer for 10 minutes
Step 7. Remove the baking tray from the oven and place a fresh slice of mozzarella cheese on each breast
Step 8. Sprinkle Salt and Pepper over each Chicken Breast
Step 9. Sprinkle a pinch of Herbs de Provence over the chicken breasts
Step 10. Return the baking tray to the oven one more time for 2 or 3 minutes until the cheese has started to melt
Step 11. Slice and place tomato on each fresh mozzarella slice
Step 12. Drizzle some of the Balsamic Glaze over each of the tomato
