Can I use a different sausage or meat?
I have never tried any meat other than smoked sausage, only because when you combine all these flavors I cannot imagine one that would make it better. Any sausage, ground beef would work well.

How do I keep the leftovers fresh?
When the casserole has cooled down completely, you can place it in an airtight container and then place it in the refrigerator. The casserole will stay fresh for up to 3 or 4 days.
Can I freeze this dish?
I am a meal planner and prepare meals in advance often. I have made this and frozen it both before baking and after. I find that it tastes better when the casserole just needs to reheat. I am not sure what it was about the unbaked but frozen, it just tasted different than it should have.
How do I reheat the casserole?
Cover the casserole with Aluminum foil and place in a preheated oven set to 300*. Let the dish warm through, about 30 minutes.

1 pound Smoked sausage, cut into slices and halved
3 cups Yukon Gold Potatoes, cut into chunks
4 tbsp butter
4 tbsp flour
½ tsp salt
¼ tsp black pepper
2 cups milk, whole
8 ounces Velveeta Cheese, cut into cubes or sliced
½ cup Cheddar Cheese, shredded
¼ tsp Smoked Paprika
How to make Cheese, Potato, and Smoked Sausage Casserole:
Step 1. Preheat the oven to 350*
Step 2. Spray a 9×13 baking pan with nonstick spray
Step 3. Cut and boil the potatoes until soft
Step 4. Place the potatoes into the baking pan with the sliced Smoked Sausage
Step 5. In a saucepan over medium heat melt the butter
Step 6. Whisk in the flour until blended
Step 7. Slowly add the milk, stirring constantly to get rid of lumpsAdd in the pepper, salt and Velveeta into the milk mix. Stir until the cheese melts
Step 8. Pour the cheese sauce over the potatoes and meat
Step 9. Stir to combine well
Step 10. Sprinkle with the Paprika and Cheddar Cheese
Step 11. Bake for 40 minutes
Step 12. Remove from the oven and let sit for 10 minutes before serving
