The kids are going to love this, especially when they come home from School to a plate full of these for them and their friends. I like to have these made up and handy if dinner is going to be really late for some reason.
They are also perfect to make ahead of time and store in the freezer. They can be packages where it is easy for anyone to grab one at a time, then heat and eat.
These can also be used for parties or made smaller and turned into an appetizer. I mean, really, who does not like tacos? This recipe is versatile, meaning that you can switch the meat or the cheese.
Can I use different meat?
This recipe calls for ground beef, however, sausage, ground turkey or even ground chicken or pork. The meat is going to be perfect no matter which type of meat you choose.
What kind of cheese should I use?
Cheddar Cheese is one of the most common cheeses that are used for Tacos or the likes of similar foods. However, there are many blended cheeses such as Three Cheese Mexican, Monterey Jack or numerous others.
What size of tortillas should be used?
I usually stick with the 6 inch size, however, you could also use larger sizes if you prefer.
How long can I freeze these for?
As long as they have cooled completely, been placed into an airtight container, or wrapped tightly, they will last in the freezer for up to 3 months.
How long can I store these Taco Pockets in the refrigerator?
Once the pockets have cooled to room temperature, they can be wrapped tightly, or placed in a ziploc bag and placed in the refrigerator for up to 3 or 4 days.
Ingredients:
- 12-6 inch flour tortillas
- 1 ½ cups Cheddar Cheese, shredded
- 2 tbsp butter, melted
- 8 ounces Cream Cheese, softened to room temperature
- ½ cup Salsa
- 1 pound Ground beef, lean
- 1 envelope Taco Seasoning mix
- Sour Cream for serving
HOW TO MAKE BEEF TACO POCKETS:
Step 1. Preheat the oven to 350*
Step 2. Grease a baking tray or line with a sheet of parchment paper
Step 3. In a skillet, crumble and brown the ground beef
Step 4. Drain the fat from the skillet when done cooking
Step 5. Add in the packet of Taco Seasoning Mix, follow the packet instructions for the amount of water to use
Step 6. In a bowl, beat the cream cheese until it is smooth, add in the ½ cup salsa and blend well
Step 7. Lay the tortillas on a flat surface in front of you
Step 8. Spoon a good amount of the cream cheese salsa combination on the center of each tortilla
Step 9. Place a spoonful of the ground beef over the cream cheese mix
Step 10. Sprinkle with some of the shredded cheese
Step 11. Continue this for each of the tortillas
Step 12. Now you need to roll each tortilla as though you are rolling a burrito
Step 13. Place each ‘pocket’ on the lined baking tray
Step 14. Brush with melted butter and add a tiny bit more of shredded cheese.
Step 15. Bake for about 15 minutes
Step 16. Serve with your favorite sauces
