When harvest time comes around and you have an abundance of fresh tomatoes from the garden, you seek ways to use them. You know the same old recipes get boring, so we look for new recipes, or begin to make up recipes ourselves.
This is the outcome of one of those days for me. I wanted something different, something delicious and something easy to make.
These tomatoes, stuffed with Taco goodness are so easy to make, taste terrific and save me the mess in the kitchen.
This is the perfect dish for the summertime weather. It is simple, it is refreshing and is one of those dishes that can be packed easily for lunches for school or work. One point that is perfect about this dish, it is low carb, using the tomato as a ‘shell’. To make it even lower in fat and calories, you can use low fat cheese.
What tomato is best to use for this meal?
There are a couple of types of tomatoes that I will use for this dish, one is on the vine tomatoes, and the other is the common Globe tomato. The Globes are most often used for slicing and putting on sandwiches, or dicing for foods such as Tacos.
What if my family does not eat spinach?
To be clear, the flavor of the spinach is not easily detected. The Spinach gives the green that would normally be shredded lettuce. For me, I simply like spinach and want to include as many healthy items in a meal that I can for my family.
How do I store the leftovers?
Once dinner is done, place the Taco stuffed tomatoes in an airtight container and place in the refrigerator. They will last for up to 4 or 5 days.
Can I freeze these?
I have not done so myself, I am not confident in how the tomatoes will be when they thaw. If sealed tightly, they should be okay. If you decide, I would suggest freezing once they are stuffed, but before the baking stage.
Ingredients:
1 pound Ground Beef, lean
1 packet Taco Seasoning
4 cups Spinach
½ cup Corn
4 Tomatoes, large
1 cup Cheddar Cheese, shredded
Parsley chopped for Garnish
How to make Taco stuffed tomatoes:
Step 1. Preheat the oven to 375*
Step 2. Lightly Spray a 9×9 baking dish with nonstick spray
Step 3. In a skillet over medium high heat, crumble and brown the ground beef, add the onions
Step 4. Cook until the meat is no longer pink and the onions are soft
Step 5. Drain the excess grease
Step 6. Mix in the corn, taco seasoning and spinach
Step 7. Stir and simmer until the Spinach has wilted
Step 8. Slice the top portion off the tomatoes, just past the stem area.
Step 9. Hollow out the tomatoes
Step 10. Fill the tomatoes with the Taco meat, corn and spinach
Step 11. Top each tomato with shredded Cheese
Step 12. Bake for 15 minutes
Step 13. Garnish with chopped parsley
