I have to say it, this is one of the tastiest, most comforting casseroles that I have ever eaten. This one is a cross between a classic Chicken casserole and a Tex Mex Chicken Casserole. There is nothing more fascinating than combining different cuisines.
This Tex Mex King Ranch Chicken Casserole is super simple to make, has tons of flavor and of course, in true Tex Mex fashion there is a bite to the casserole!
Corn tortillas, shredded chicken, a creamy soup base, green chilis, tomatoes and the perfect blend of certain spices make this a dish one that the family will not soon forget. You need to get this on the table tonight!

Could I use beef in this casserole?
You could, but then it would be a taco casserole. The Tex Mex Kings Ranch Chicken Casserole is a special dish in its own merit and should not be changed in my opinion.
Could I use Flour Tortillas?
Again, that would take away from the uniqueness of this delicious dish. The Corn Tortillas add a layer of flavor that you can’t match with flour tortillas
Can I store any of the casserole that remains?
You can allow the food to cool completely, place it into an airtight container and then place it in the refrigerator for up to 4 days. The longer the food sits, the more the spices blend together. However, after too long the flavor just is not there any longer.
Can I leave out the green chilis?
You could reduce the amount by half if you want to, part of the enticing aspect to this dish is the small amount of kick the dish has.
Ingredients:
1 Green Bell Pepper, chopped
1 large yellow onion, chopped
10 ounce can Rotel diced tomatoes with green chilis
3 cups Chicken cooked and shredded
2 cans Cream of Chicken condensed Soup
1 tsp Chili Powder
1 tsp Garlic Powder
8 small Corn Tortillas cut into fourths
½ cup Cheddar Cheese, Shredded
How to make this King Ranch Chicken Casserole:
Step 1. Preheat the oven to 350*
Step 2. Spray a 9×9 baking dish with nonstick cooking spray
Step 3. Heat a skillet over medium high heat and spray it with cooking spray
Step 4. Toss in the chopped onions and green peppers and saute until soft
Step 5. Add 2 cans of Cream of Chicken Soup, Rotel, chili powder and garlic to the skillet
Step 6. Stir to blend and combine well
Step 7. Add the shredded chicken to the skillet and stir again
Step 8. Layer the bottom of the prepared baking dish with ⅓ of the quartered corn tortillas
Step 9. Spoon ⅓ of the chicken mixture over the tortillas
Step 10. Repeat the layers of tortillas and chicken mixture two more times
Step 11. Top with the shredded Cheddar Cheese
Step 12. Place in the oven and bake for 30 minutes
