This salad type dish is super easy to make, takes very few ingredients and is refreshing and delicious. There are many variations of the Cucumber, Tomato and Onion recipe, understandable, people make foods the way they like. Out of all that I have tried, I put this one together and I feel it tastes the best and I believe you are going to think so too!

Should I use English Cucumbers?
If you prefer English Cucumbers then feel free to use those. I do not think it would make much of a difference in the Cucumber, Tomato and Onion Marinated Salad.
Should I use Roma Tomatoes?
The choice of which tomato is up to you. I personally prefer Roma Tomatoes. As long as they are medium sized tomatoes, they will work just fine.
How do I keep this Marinated Cucumber, Onion and Tomato dish fresh?
If, for some odd reason you have any left after dinner, place them into an airtight container and then into the refrigerator. They can sit in the refrigerator for up to 4 days.
Can I freeze Marinated Cucumber, Tomato and Onions?
I would not freeze this mixture. Cucumbers are mostly water to begin with, there will be a higher than average change of a difference in texture when they thaw.
I have seen people use Red Onion, which onion is best to use?
Honestly, any onion will work. I have used white onions, Vidalia, and red onions and I absolutely love all of them.
Ingredients:
2 to 3 Cucumbers, large, peeled and sliced
3 Tomatoes, medium size, diced
1 large Vidalia Onion, sliced into rings, (separate the rings)
1 cup water
½ cup Vinegar, White, Distilled
¼ cup Olive Oil
1 tsp Basil, dried
½ tsp Salt
¼ tsp Pepper
How To Make Cucumber and Tomato Salad:
Step 1. Peel and slice the cucumbers and place them into a large bowl
Step 2. Was and dice the 3 medium tomatoes and place them in the bowl with the cucumber slices
Step 3. Peel and slice the large onion.
Step 4. Separate the rings of the slices and place them into the bowl
Step 5. In a medium bowl combine the Vinegar, water, Olive Oil, Basil and Salt and Pepper,
Step 6. Using a which combine this mix together
Step 7. Pour the liquid mix over the vegetables in the bowl
Step 8. Toss to coat all the vegetables
Step 9. Chill for at least 2 hours before serving
