There are variations to this recipe, just like most recipes. The potatoes are perfect when cut into wedges, however when they are sliced and fried with the onions, they are then called American Fries by many people.
What can I use if I do not have peanut oil?
You could definitely use a different type of Oil. You do want to use one with a high smoke level. Avocado Oil is one of those oils. Canola Oil has the lowest, in stark contrast to Avocado Oil.
What type of Potatoes should be used for these Fried Potatoes?
The recipe states Gold Potatoes, this would be Yukon Gold Potatoes. They hold up well, are somewhat waxy, which is what you need.
What type of onion should I be using?
I find the Yellow Onion is the best onion that I have found for this side dish. Other types could be used, but again, white or yellow are the best.
Ingredients:
½ Yellow Onion, chopped in large pieces
1 pound Gold or Yukon Gold Potatoes, cut into wedges
2 tbsp Butter
Salt and Pepper to taste
Peanut Oil
Basil for Garnish
Paprika for Garnish
HOW TO MAKE FRIED POTATOES AND ONIONS :
Step 1. Wash and cut the potatoes into wedges
Step 2. Heat Peanut Oil in a skillet over medium high heat
Step 3. Add the potato wedges and chopped onion to the skillet
Step 4. Cook until the potatoes become golden brown and crispy
Step 5. Stir and turn the potatoes and onions to avoid burning any parts of them
Step 6. Sprinkle with Salt and Pepper, drain the grease off by placing the potatoes on paper towels to drain
Step 7. Garnish with the Basil and Paprika before serving
