Breakfast does not have to be eaten just in the mornings any longer. Many families have evenings when they make breakfast for dinner and let me tell you it is truly a refreshing change of pace! This Breakfast Casserole is one that is super delicious, easy to make and combines all of your favorite breakfast items in one pan.
I have seen many different variations of this casserole, but they do not match up the same way.
Some have too much potato in it and not enough sausage or egg. When you make a breakfast casserole you want an equal combination of each ingredient. This casserole is also a way to get kids to eat eggs when they do not like the taste of eggs.
The flavor is combined with others in this so it does not taste as bland as what they expect.
Should I use frozen hash browns or home made hash browns?
With this casserole, I prefer to use frozen hashbrowns. You could use homemade hash browns, but that is time you do not have. Go the easy route and use the frozen.
What type of sausage should I use?
Any flavor of ground breakfast sausage is good for this recipe. I generally use the simple plain ground sausage.
Is Cheddar Cheese the best to use?
I like using Cheddar Cheese, however, you can use any type of cheese that you prefer. This could be Mozzarella or a blend of different cheeses.
Do I have to use the green chilis?
Of course not! The green chilis add a touch of bite or heat to the casserole. You can add more or less of the green chilis than what is listed.
Ingredients:
9 large eggs
2 pounds Sausage, ground breakfast type
2 pounds frozen hash browns
2 cups milk
2 cups Cheddar Cheese or choice of Cheese
1 tsp Garlic Powder
½ tsp Onion Powder
Salt and pepper to taste
1 small can Green Chilis
HOW TO MAKE HASHBROWN CASSEROLE :
Step 1. Preheat the oven to 350*
Step 2. In a skillet over medium high heat, brown the ground sausage until it is cooked thoroughly.
Step 3. Remove the pan from the heat and spoon the sausage into a bowl and set to the side
Step 4. In the same skillet heat the hash browns until lightly brown, about 8 minutes
Step 5. Grease a 9×13 baking dish
Step 6. Place the hash browns in the bottom of the baking pan
Step 7. Spoon the sausage on top of the hash browns
Step 8. Sprinkle the shredded cheese over the sausage
Step 9. Sprinkle the green chilis on top of the cheese if you are using the chilis
Step 10. In a mixing bowl combine the eggs, onion powder, garlic powder, milk and salt and pepper
Step 11. Blend well using a whisk
Step 12. Pour this egg mixture over the top of the Casserole
Step 13. Place in the oven and bake for 35 to 40 minutes, until the eggs are set
Step 14. Slice and serve hot!
