Lasagna has been around forever, of that we can be sure. However, taking a classic dish and turning it into a soup is a whole new aspect of this classic. Imagine your favorite food as one of the best soups you have ever tasted!
The wonderful taste of lasagna made in one pot, with less mess than what you would have when making an actual lasagna. You are probably wondering if that is even possible, I am here to tell you that it is!
One pot, a whole lot less mess, the same great flavor and much less time spent in the kitchen putting this dish together. This soup could be served by itself, or you could toast up a loaf of french bread to go with it, you could even make Garlic cheese bread or breadsticks to serve along with the soup.
Imagine that crusty type of bread soaking up the delicious broth of lasagna soup.
Can I use a different type of meat in this soup?
This recipe does call for Italian Sausage and Ground Beef. You could however, use the total amount of meat as Italian Sausage. If there is another type of meat you enjoy with lasagna, please add it. You could also leave the meat out and turn this meatless.
Could I make this with Tofu?
If you are accustomed to cooking with Tofu, feel free to substitute the Tofu for either or both of the meats in this recipe.
Can I make this in advance?
This is another one of those dishes that will only get better the next day or two. However, too much after that, it will be difficult to guarantee the noodles do not get mushy and ruin the soup.
Can this soup be stored in the refrigerator?
This soup should be kept in an airtight container and then put into the refrigerator for up to 3 to 4 days. It could be frozen for up to 2 months. Be warned there may be a slight difference in texture with the noodles upon thawing.
Ingredients:
10 Lasagna noodles
1 medium onion, chopped
1 pound ground beef
1 pound Ground Italian Sausage
24 ounces Pasta Sauce
4 tsp Garlic, freshly minced
14 ounces Tomatoes, diced
2 tbsp Tomato Sauce
2 tsp Balsamic Vinegar
2 tsp Basil
1 tsp Oregano
1 tsp Sugar
1 Bay leaf
8 cups Chicken broth
Salt and Pepper, if required
HOW TO MAKE LASAGNA SOUP :
Step 1. In a large stock pot or Dutch oven over medium high heat, add the onion, ground beef and ground sausage to the pot.
Step 2. Cook until the meat is thoroughly cooked
Step 3. Drain any excess grease from the pot
Step 4. Return the pot to the stove and mix in the garlic.
Step 5. Saute for 30 seconds
Step 6. Pour in the pasta sauce, diced tomatoes, broth, Bay leaf, oregano, Basil, sugar, Salt and Pepper, tomato paste, Balsamic vinegar and stir altogether
Step 7. Cover and bring to a boil
Step 8. Break the lasagna noodles into pieces and slowly add them to the pot
Step 9. Reduce the heat to medium low and cook until the noodles have become tender
Step 10. Top he soup with Ricotta, Mozzarella or Parmesan cheese
Step 11. Serve hot and Enjoy!
