1 lb. 96% lean ground beef
1 ½ tsp Kosher salt
1 C yellow onion (diced)
1 C celery (diced)
1 C carrot (diced)
1 can (28oz) Fire Roasted tomatoes
5 C chopped cabbage
1 container (32oz) Beef stock
1 tsp minced garlic
1 tsp cumin
1 tsp cajun spice
1 tsp smoked paprika
1 tsp chile powder
3 (+) bay leaves
HOW TO MAKE THIS CHUNKY BEEF AND TOMATO SOUP:
Step 1. Prep the dutch oven with nonstick cooking spray.
Step 2. Add the ground beef sprinkled with salt to the dutch oven.
Step 3. Cook the ground beef until the meat has turned brown. (About 3-4 minutes)
Step 4. Using a wooden spoon, break up the beef chunks into small pieces.
Step 5. Add onion, celery, and carrots to the browned ground beef.
Step 6. Saute for 4-5 minutes.
Step 7. Stir in the fire roasted tomatoes, chopped cabbage,carrots, and beef stock.
Step 8. Add in the seasonings, minced garlic, cumin, cajun spice, smoked paprika, chile powder, and bay leaves.
Step 9. Stir well to blend all flavors.
Step 10. Cook on low heat for 1 hour.
