⅓ C 1% buttermilk
1 Tbsp butter
¾ tsp Kosher salt
Black pepper (to taste)
1 Tbsp minced garlic
1 Tbsp minced fresh chives
¼ C reduced fat cheddar cheese (shredded)
¼ C Italian cheese
HOW TO MAKE THIS LOADED CAULIFLOWER BAKE:
Step 1. Add the cauliflower florets to a large pot of boiling water.
Step 2. Boil for 15-20 minutes. (Or until the florets are soft.)
Step 3. Strain the hot water.
Step 4.Return the cauliflower to the large pot.
Step 5. Preheat the oven to 350 degrees.
Step 6.Prep a 8 x 8 inch casserole with a nonstick baking spray..
Step 7. Add the buttermilk, butter, garlic, salt and pepper to the large pot containing the cauliflower.
Step 8. Use a hand blender to puree all of these ingredients.
Step 9. Add minced chives to the large pot.
Step 10. Scoop the mixture in the pot to the prepared baking dish.
Step 11. Sprinkle the top with both cheeses and bacon.
Step 12. Bake at 350 degrees for 10 minutes.
