Ingredients
- 2 C. Cherry tomatoes sliced in half
- 1 Cucumber peeled, deseeded and chopped
- 1 Avocado diced
- 2 Tbsp. Minced red onion
- 4 oz. Feta cheese crumbled
- 2 Tbsp. Fresh chopped parsley
- 1 Tbsp. Red wine vinegar
- 2 Tbsp. Olive oil
- Salt and pepper to taste
Instructions
- Add the ingredients to a large mixing bowl, and stir to combine well.
- Serve right away, or chill before serving if you prefer.
