This is seriously Grandmas’ Banana Cake recipe, with some minute changes that are bound to make everyone smile ear to ear. There is more flavor to enjoy, and just looking at the cake makes your mouth water.
It is very seldom that you find a recipe that has kept the old recipe intact, but yet added new twists. This Banana Pudding Cake is the recipe.
The cake contains banana pudding mix, the filling is banana pudding, and the frosting is a simple whipped topping with Nilla Wafers and Sweetened Condensed Milk Drizzle. I have been experimenting with different ideas for the topping. I will let you know what I come up with.
What flavor of Cake should I use for this cake?
This recipe calls for a homemade cake. I would imagine that you could save time by using a box mix. If so I would use white cake.
How do I keep this cake fresh?
First, you will need to keep it covered in an airtight container. The cake will also have to be kept in the refrigerator. The whipped topping will not last much more than 24 hours, so do your best to eat it all before that time is up.
Can I freeze the cake?
Once it is assembled and frosted, I would not freeze it. The pudding will deteriorate when thawing, as will the whipped topping.
Ingredients:
3 cups flour
1 tbsp Baking Powder
1 box Banana pudding mix, instant and sugar free
1 cup Butter
1 ⅔ cup Granulated Sugar
2 egg whites
3 large eggs
2 tsp Vanilla
1 cup Milk
Filling:
1 ⅓ cup Milk
1 box Instant Vanilla Pudding, sugar free, instant
1 cup Cool Whip Whipped Topping, thawed
2 Bananas, large, sliced
Topping:
3 to 4 cups Cool Whip whipped topping
Vanilla Wafers
Sweetened Condensed Milk
Whipped Cream (use the Can type spray topping)
How to make Banana Pudding Cake:
Step 1. Preheat the oven to 350*
Step 2. Grease 2 round cake pans liberally
Step 3. In a mixing bowl, combine the butter and sugar together
Step 4. Add in the eggs and egg whites
Step 5. Add the vanilla and beat again
Step 6. Add in the flour, baking powder, pudding mix, and beat until smooth
Step 7. Add in milk and beat until smooth
Step 8. Pour the batter evenly between the two prepared pans
Step 9. Bake for 25 to 30 minutes until the cake is done, test with a toothpick
Step 10. Remove to a wire rack and let cakes cool completely
Step 11. In a bowl combine the pudding mix the milk and 1 cup of Cool Whip. Whip until smooth and place into the refrigerator to thicken and chill while you cool the cake completely
Step 12. Place one cake layer on a plate and level the top of the cake off
Step 13. Spread the filling mixture over the top of the layer
Step 14. Slice the bananas and place them on top of the filling mix
Step 15. Place the second layer on top of the first layer
Step 16. Cover the outside of the cake with the Cool WhipThen decorate with Spray whipped topping and decorate with the Vanilla Wafer cookies
