WHAT INGREDIENTS YOU NEED TO MAKE THIS SKILLET CAJUN FISH :
2 Tbsp olive oil (divided)
6oz Cod fish fillets
¾ C onion (chopped)
1 Tbsp minced garlic
¾ C green bell pepper (diced)
2 ½ C roma tomatoes (chopped)
2 Tbsp Cajun spice
HOW TO MAKE THIS SKILLET CAJUN FISH :
Step 1. Lay the cod fillets on a baking tray,
Step 2. Season both sides of the fillets with Cajun spices, salt, and pepper.
Step 3. Set aside.
Step 4. Add olive oil to the cast iron skillet on medium heat.
Step 5. Stir in the chopped onion and garlic until soft (or for a few minutes).
Step 6. Add the tomatoes and green bell pepper cooking for 2-3 minutes (or until the tomatoes are soft).
Step 7. Move the cooked vegetables on a plate. Set aside.
Step 8. Heat olive oil in the hot skillet,
Step 9. Add the seasoned fillets to the skillet.
Step 10. Put the lid on the skillet and cook on medium-low to simmer,
Step 11. Turn the fillets to ensure that both sides are evenly cooked.
Step 12. Add the cooked vegetables back in the skillet.
Step 13. Cover the fillets wi.th vegetables and sauce.
Plate the fillets and spoon sauce and vegetables over the fillets.
