This is one of my go-to healthy soup recipes because it also tastes fantastic!
Think of it as a yummy veggie soup you can enjoy whenever you’d like.
Serving size: 1 cup | Makes: 6-8 servings | 3 PersonalPoints per serving
What you need to make this Instant Pot Weight Loss Soup:
Olive oil
White onion (chopped)
Minced garlic
Tomato paste
Fresh zucchini (cut in quarters and chopped)
Fresh celery stalks (cut in half and sliced)
Carrots (peeled and rondelle cut)
Yukon potatoes ( cut in half, quartered, and cut in chunks)
Head of purple cabbage (chopped)
Fresh green beans ( each cut in half)
Fresh broccoli florets
Dried basil
Dried oregano
Onion powder
Garlic powder
Red pepper flakes
Salt and pepper to taste
Low-sodium vegetable broth
Bay leaves
How to make this Instant Pot Weight Loss Soup:
Step 1. Set the Instant Pot to Saute
Step 2. When it is hot add the olive oil.
Step 3. When the olive oil is hot add in the chopped onions, cooking until they are soft.
Step 4. Add in the minced garlic, cooking for 1 minutes.
Step 5. Continue to stir for the minute.
Step 6. Stir in the celery, zucchini, carrot, potatoes, cabbage, and tomato paste.
Step 7. Stir to mix.
Step 8. Add the basil, oregano,onion powder, garlic powder, red pepper flakes.
Step 9. Stir to combine.
Step 10. Salt and pepper to taste.
Step 11. Pour in the broth. Stir to mix.
Step 12. Add in the green beans, broccoli florets, and bay leaves. Stir to mix.
Step 13. The broth should cover the vegetables.
Step 14. If it doesn’t add more broth. (Watch for the Max fill line.)
Step 15. Close the lid.
Step 16. Set to manual High Pressure for 5 minutes.
Step 17. The Instant Pot will take about 10 minutes to reach high pressure.
Step 18. Allow 5 more minutes to cook.
Step 19. Close the vent.
Step 20. The timer will go off in about 10 minutes.
Step 21. THis is the 10 minute Natural Pressure Release.
Step 22. Carefully open the vent and release the stream.
Step 23. Open the Instant Pot.
Step 24. Remove the bay leaves.
Step 25. Stir to mix well.
Step 26. Add more seasoning as needed.
Step 27. 1Garnish with chopped parsley.
Serve.

- 2 Tbsp tomato paste
- 2 fresh zucchini (cut in quarters and chopped)

- 3 carrots (peeled and rondelle cut)
- 4 Yukon potatoes ( cut in half, quartered, and cut in chunks)
- ¼ head of purple cabbage (chopped)
- 1 C fresh green beans ( each cut in half)
- 1 ½ C fresh broccoli florets
- 1 tsp dried basil
- 1 tsp dried oregano
- 1 tsp onion powder
- 1 ½ tsp garlic powder
- 1 tsp red pepper flakes
- Salt and pepper to taste
- 6 C low-sodium vegetable broth
- 3 bay leaves
