WHAT INGREDIENTS YOU NEED TO MAKE THIS GROUND TURKEY SKILLET WITH ZUCCHINI, CORN, BLACK BEANS, AND TOMATO :
2 medium fresh zucchini (quartered and sliced)
1 lb ground turkey (93% lean)
¼ C onion (chopped)
1 Tbsp tomato paste
1 can(¾ cup) black beans (rinsed and drained)
1 can (¾ cup) sweet corn (drained)
1 large tomato (diced)
1 jalapeno (diced)
1 tsp minced garlic
2 + Tbsp cilantro (chopped)
1 ¼ tsp cumin
1 tsp kosher salt
¼ C water
HOW TO MAKE THIS GROUND TURKEY SKILLET WITH ZUCCHINI, CORN, BLACK BEANS, AND TOMATO :
Step 1. Prep a large skillet with nonstick cooking spray.
Step 2. Heat the skillet on high temperature.
Step 3. Add the ground turkey.

Step 4. Season the ground turkey with salt and cumin.
Step 5. Continue to cook the ground turkey for about 5 minutes or until brown.
Step 6. Move the cooked ground turkey to one side of the skillet.
Step 7. On the other side of the skillet add the chopped onion and tomato paste.
Step 8. Cook the onion and tomato paste for about 1 minute.

Step 9. Stir in the tomato, jalapeno, minced garlic, cilantro, and zucchini.
Step 10. Pour in ¼ cup of water.
Step 11. Stir to mix well.

Step 12. Add in the corn and beans.

Step 13. Stir.
Step 14.Reduce the heat on the stove to low.
Step 15. Mix well.
Step 16. Cover and continue to cook for 4-5 minutes.
