Ingredients
Method
- Prep a large skillet with nonstick cooking spray.
- Heat the skillet on high temperature.
- Add the ground turkey.
- Season the ground turkey with salt and cumin.
- Continue to cook the ground turkey for about 5 minutes or until brown.
- Move the cooked ground turkey to one side of the skillet.
- On the other side of the skillet add the chopped onion and tomato paste.
- Cook the onion and tomato paste for about 1 minute.
- Stir in the tomato, jalapeno, minced garlic, cilantro, and zucchini.
- Pour in ¼ cup of water.
- Stir to mix well.
- Add in the corn and beans.
- Stir.
- Reduce the heat on the stove to low.
- Mix well.
- Cover and continue to cook for 4-5 minutes.
