Ingredients
  

  • 2 medium fresh zucchini quartered and sliced

  • 1 lb ground turkey 93% lean
  • 1 lb ground turkey 93% lean
  • ¼ C onion chopped

  • 1 Tbsp tomato paste

  • 1 can ¾ cup black beans (rinsed and drained)

  • 1 can ¾ cup sweet corn (drained)
  • 1 can ¾ cup sweet corn (drained)
  • 1 large tomato diced
  • 1 large tomato diced
  • 1 jalapeno diced
  • 1 jalapeno diced
  • 1 tsp minced garlic
  • 1 tsp minced garlic
  • 2 + Tbsp cilantro chopped
  • 2 + Tbsp cilantro chopped
  • 1 ¼ tsp cumin
  • 1 ¼ tsp cumin
  • 1 tsp kosher salt
  • 1 tsp kosher salt
  • ¼ C water
  • ¼ C water

Method
 

  1. Prep a large skillet with nonstick cooking spray.
  2. Heat the skillet on high temperature.
  3. Add the ground turkey.
  4. Season the ground turkey with salt and cumin.
  5. Continue to cook the ground turkey for about 5 minutes or until brown.
  6. Move the cooked ground turkey to one side of the skillet.
  7. On the other side of the skillet add the chopped onion and tomato paste.
  8. Cook the onion and tomato paste for about 1 minute.
  9. Stir in the tomato, jalapeno, minced garlic, cilantro, and zucchini.
  10. Pour in ¼ cup of water.
  11. Stir to mix well.
  12. Add in the corn and beans.
  13. Stir.
  14. Reduce the heat on the stove to low.
  15. Mix well.
  16. Cover and continue to cook for 4-5 minutes.
