I used to love stopping at the local bakery to grab a cinnamon sugar donut. They were always my favorite treat. However, now that I have been able to turn my favorite donut into a loaf, I can have this treat everyday if I choose. Sometimes more than once a day.
This Cinnamon Donut Bread is almost identical to eating a cinnamon sugar cake donut from the bakery. This recipe is obviously a play on those tasty treats.
The bread is so easy to make, it is a quick bread and really does not involve a lot of ingredients. Plus you get that wonderful fresh bakery smell as you bake this sweet bread in your oven. The difference is simply that a Sweet bread generally involves yeast and time to allow the dough to rise.
This recipe is not like that. It is simple, easy, flavorful and perfect for those days when you want a treat, but do not want to wait for dough to rise.
How is this Sweet Bread going to rise if it has no yeast?
The bread will rise to the height it needs to. This bread is meant to taste like a cake donut, which it completely does.
What if I do not have Buttermilk?
You can make a homemade version of Buttermilk by adding ½ tsp of White Vinegar to ½ cup of Whole milk. Stir and let it sit for a few minutes to thicken.
Could I use a sugar substitute in the topping mix?
Generally these sugar substitutes will take far less in amount than regular sugar. This could make a huge change in how the topping works and tastes. Plus a smaller amount of one ingredient is going to make a drastic change in the texture of the topping. With less granulated sugar, or less brown sugar, the mix is going to be runnier and not cover the Sweet bread the way it is intended.
How should I store this Sweet Bread?
The bread can be placed into an airtight container, or into a ziploc bag to keep it fresh longer. If it is left on the counter, it will stay fresh for up to 4 days, if placed into the refrigerator, the bread should last 5 to 6 days.
What makes this recipe special?
The fact that this Sweet bread is so similar to a Cinnamon Sugar Cake donut is enough for me, however, to be able to make a sweet bread that has no yeast, is a benefit in that you can have the bread made in a shorter amount of time.
Ingredients:
¼ cup Oil, I used Canola
¼ cup Butter, unsalted and softened
1 cup sugar
1 tsp Vanilla Extract
2 Eggs, large, room temperature
1 ½ cups Flour, All purpose is what I used
1 tsp Baking Powder
½ tsp Salt
½ cup Buttermilk
½ tsp Molasses
½ tsp Cinnamon
Topping:
½ cup Butter, melted, unsalted
¼ cup light Brown Sugar, packed
¼ cup Granulated Sugar
½ tsp Cinnamon
How to make cinnamon sugar donut bread:
Step 1. Preheat the oven to 350*
Step 2. Spray the loaf pan with a non-stick spray
Step 3. In a large bowl combine the butter, oil and sugar. Mix until combined
Step 4. Add in the eggs and vanilla, beat until smooth
Step 5. Slowly add in the dry ingredients and the buttermilk, alternating as you add
Step 6. Beat after each addition
Step 7. Scrape the sides of the bowl to incorporate all ingredients
Step 8. Break apart all lumps and blend well
Step 9. Place ½ to ¾ cup of the batter into another bowl
Step 10. In this small bowl, add in the cinnamon and molasses
Step 11. Stir well
Step 12. Using a spoon, place half the brea batter into the bottom of the loaf pan
Step 13. Spoon half of the molasses batter into the bottom layer
Step 14. Spread the remaining bread batter over the top of the molasses mixture
Step 15. Spoon the remaining mix on top of the bread batter
Step 16. Using a knife swirl this mixture into the bread batter
Step 17. Place in the preheated oven and bake for 40 to 45 minutes. Test with a toothpick to be sure the bread is done
Step 18. Remove from the oven and set to the side to allow it to cool for 10 minutes
Step 19. Gently loosen the loaf from the sides of the loaf pan
Step 20. Carefully remove the bread loaf from the pan
Step 21. In a shallow dish add the cinnamon, brown sugar and granulated sugar. Stir to combine
Step 22. Carefully dip each side of the loaf into the butter mixture
Step 23. Spoon the melted butter mixture over the edges
Step 24. Sprinkle all sides with a sugar cinnamon mix
Step 25. Be sure to coat the top of the bread loaf with the melted butter mixture and also sprinkle the cinnamon sugar mixture on the top of the loaf
