WHAT YOU NEED TO MAKE THIS CHICKEN AND MUSHROOMS IN A GARLIC WHITE WINE SAUCE:
(16 oz) chicken tenders
tsp unsalted butter
tsp olive oil
C all purpose flour
Tbsp minced garlic
½ C sliced mushrooms
Tbsp capers
C white wine
C chicken broth (fat free)
Salt and black pepper (to taste)
C fresh parsley (chopped)
HOW TO MAKE THIS CHICKEN AND MUSHROOMS IN A GARLIC WHITE WINE SAUCE:
Step 1. Preheat the oven to 200 degrees.
Step 2. Prep cast iron skillet with nonstick cooking spray.
Step 3. Spoon the flour on a plate.
Step 4. Sprinkle both sides of the chicken tenders with salt and black pepper.
Step 5. Cover both sides of each chicken tender with the flour. Set aside.
Step 6. Put the cast iron skillet on the stove with temperature at medium heat.
Step 7. Add 1 teaspoon of butter and 1 teaspoon of olive oil to the skillet.
Step 8. Add the chicken tenders to the skillet.
Step 9. Constantly turn the chicken tenders until they are no longer pink.
Step 10. Transfer the chicken tenders to a baking pan and place it in the warm oven.
Step 11. Add the rest of the butter and olive oil to the skillet.
Step 12. Stir to blend.
Step 13. Add the minced garlic.
Step 14. Stir for several seconds to blend.
Step 15. Add the mushrooms sprinkling salt and pepper on them.
Step 16. Continue to stir for about 5 minutes or until the mushrooms are a golden brown.
Step 17. Pour the white wine and broth in the skillet to mix.
Step 18. Add the capers and parsley.
Step 19. Using a wooden stir the wine, broth, capers, and parsley.
Step 20. Continue to stir, breaking loose any browned pieces from the bottom of the skillet.
Step 21. Cook until the liquid is reduced by half.
Step 22. Remove the chicken from the oven, placing it back in the skillet.
Step 23. Spoon the sauce over the chicken.
Serve the chicken tender topping with the mushroom sauce.
