What toppings should I use?
There are so many possibilities, they cannot all be listed. What you normally choose for a quesadilla topping should be included for this one. You can use Pico de Gallo, Sour Cream, Guacamole, Cheese Sauce, Olives, Salsa plus so many more.
Can I use Chicken?
You could use Chicken, turkey, ground beef, sausage or even Tofu if you prefer. Also a quesadilla does not have to have meat! You can use refried beans, vegetables or have a plain cheese quesadilla.
How many tortillas do I need?
This will depend on the size of sheet pan that you are using. On a small sheet pan, 7 to 8 quesadillas would be common. On a large sheet pan you will probably need 10 to 12 tortillas.
How do I store the quesadilla?
If you are lucky to have any left after dinner, smile! Wrap the quesadilla in plastic wrap or aluminum foil. You could also place it in an airtight container. The quesadilla will last for 2 to 3 days in the refrigerator. If you were to freeze the quesadilla, it would be able to remain in the freezer for up to 2 months.
How do I reheat the Quesadilla?
You can place the Quesadilla on a sheet pan and warm it up in the oven. You could also use a Toaster Oven.
Ingredients:
1 ½ pounds Ground Beef, lean
1 tbsp Olive Oil
1 Onion, large, chopped or diced
2 Bell Peppers, Green diced
1 tsp Cumin
1 tsp Chili Powder
½ tsp Paprika
Salt and pepper to taste
1 cup Cheddar Cheese, shredded
1 cup Monterey Jack Cheese, shredded
8 to 10 Tortillas, large (depending on sheet pan size)
Garnish:
2 Green Onions, sliced thin
Sour Cream
Pico De Gallo
Salsa
How To Make Sheet Pan Quesadillas:
Step 1. Preheat the oven to 425*
Step 2. Heat a skillet over medium high heat
Step 3. Add Olive Oil to the skillet, add in the onions and green peppers and cook until soft, about 5 minutes, Drain the fat
Step 4. Add the ground beef, crumbling as it cooks, when no longer pink, drain the fat
Step 5. Stir in the Paprika, cumin, chili powder and salt and pepper
Step 6. Place 6 Tortillas on the sheet pan, two on either side, one at each end
Step 7. Be sure to overlap the tortillas
Step 8. Place the cooked ground beef down the center of the tortillas in a rectangular shape
Step 9. Add the onion and pepper over the top of the ground beef
Step 10. Add the shredded Cheese to the top and then sprinkle the Green onions on top of the cheese
Step 11. Fold the tortillas towards the center, beginning at the sides, then fold the ends up
Step 12. Place one more tortilla on the top center to hold the tortillas down and to ensure the ingredients stay inside.
Step 13. If necessary, you can place another sheet pan on top of the quesadilla on top to hold the fold tortilla in place
Step 14. Bake in the preheated oven for 25 to 30 minutes. (if you used a second sheet pan to ho;d the tortillas in place, remove it after 10 minutes)
Step 15. Slice the Quesadilla into rectangles and serve warm with Sour Cream and other choices of toppings.
