Mexican Street Corn is made in various ways, but I have found this recipe to be the easiest version, and the tastiest. In other parts of both countries, other ingredients are often added, such as bacon and jalapenos.
This dish works well as a side dish or it can also be the main dish. This is a classic side dish for tacos and Mexican Rice.
Can I put my Sweet Corn in the smoker?
You can roast the corn in the smoker if you want to. The roasted corn will add another layer of flavor to the corn.
How do I keep the corn fresh for a few days?
If there is the possibility that all the corn will not be eaten, do not add the toppings to the cobs after roasting. The corn can be wrapped in plastic foil and kept in the refrigerator for 5 to 7 days. You could also freeze the corn for up to 4 months, as long as there had been no toppings on it.
What makes Mexican Street Corn so good?
The flavor combination is what adds to the great flavor of the roasted corn. When you add on the mayonnaise and chili powder, or your choice of other toppings, this will give you a delightful dish that you will want time and again.
Ingredients:
4 to 6 ears of Sweet Corn, husks removed
1 lime, juiced and zested
¼ cup Sour Cream
¼ cup mayonnaise
2 Garlic Cloves, crushed
½ cup Cotija Cheese, crumbled
¼ cup Cilantro, chopped
½ tsp Chili Powder
¼ tsp Salt
How To Make Mexican Street Corn:
Step 1. Heat the grill to 400*
Step 2. Place the ears of corn on the grill rack for about 10 to 12 minutes, turning once in a while
Step 3. In a bowl combine the sour cream, mayonnaise, garlic, lime juice, lime zest
Step 4. Mix in the Cotija Cheese and Cilantro
Step 5. Spread the mixture evenly over the ears of corn and sprinkle with chili powder
Step 6. Top the ears of corn with more Cotija Cheese, and cilantro
Step 7. Serve and enjoy!
