Ingredients Needed:
Lean ground beef (96%)
Minced garlic
Dried thyme
Dried oregano
Black pepper
Salt
Onion powder
Italian bread crumbs
Ketchup (sugar free) Extra for topping
Worcestershire sauce
Large egg (beaten)
How to make Mexican Meatloaf:
Step 1. Preheat the oven to 350 degrees.
Step 2. Prep muffin tin with nonstick baking spray. Set aside.
Step 3. Combine bread crumbs, minced garlic, and seasonings in a large bowl. Mix well.
Step 4. Add in the beaten egg, Worcestershire sauce, sugar free ketchup, and meat.
Step 5. Stir well until all ingredients are combined.
Step 6. Divide the meat into 12 balls.
Step 7. Put each meatball into each muffin tin well.
Step 8. Using your hand press each meatball to flatten the tops in the well.
Step 9. Bake at 350 degrees for 20-25 minutes. (Or until the tops are a golden brown,)
Step 10. Take out of the oven.
Step 11. Add a teaspoon of sugar free ketchup on the top of each meatball.
Step 12. Return to the oven for 5 more minutes.
Step 13. Remove from the oven.
Step 14. Garnish with parsley.
