So many people fell in love with Coleslaw when KFC was a more popular restaurant. I know my kids still only eat coleslaw if I say it is the stuff from the restaurant. Needless to say, I am not going to purchase coleslaw that often.
I found a way to imitate the recipe and believe me, the kids think I hit KFC on the way home from work! Who am I to tell them differently?
This recipe is an exact match to the creamy, slightly tangy, slightly sweet version of coleslaw sold at the popular restaurant, but much more cost effective. With summer coming, I know that we all need this recipe! Coleslaw is summertime, and summer is not complete without a bowl sitting on the picnic table.
The recipe is really easy to make and will disappear just as fast so you may want to consider doubling the recipe so you can have some for a snack at night.
Do I have to use Buttermilk?
I do suggest it. If you do not have any, it is actually easy to make just the amount needed. All you do is add 1 tsp vinegar to 1 cup milk and stir. Let that sit for a few minutes and you will have buttermilk. I know many people use lemon juice to make it, that works also, I just prefer the vinegar method.
Should I keep this Coleslaw chilled?
Yes, Coleslaw is always better when it is cold. It adds to the crunch and the creamy perfectly and that is one aspect that makes coleslaw so popular, the texture differences.
Can I shred my own cabbage?
Of course you can, there are times when I like to cut corners and save me some time in the kitchen. Any shortcut that can be made gives me more time with my family.
Do I have to add vinegar and lemon juice, if I made my own buttermilk?
It may seem like it is too much, however, it is the way you are going to imitate the exact flavor of the store bought coleslaw.
Ingredients:
1 bag shredded Coleslaw mix, cabbage
2 carrots, peeled and grated
½ onion, diced fine
¼ cup Buttermilk
½ cup Mayonnaise, any brand
¼ cup Whole milk
¼ cup granulated sugar
1 tbsp white vinegar
1 tbsp lemon juice
½ tsp salt
¼ tsp black pepper
HOW TO MAKE KFC Coleslaw :
Step 1. In a large bowl add the shredded cabbage, grated carrots, diced onion and stir to combine
Step 2. In another bowl combine the mayonnaise, buttermilk, milk, lemon juice, vinegar and sugar. I used a whisk to blend it together really well
Step 3. Pour the mayonnaise mixture over the cabbage and stir to coat everything
Step 4. Add the salt and pepper if desired and stir to blend
Step 5. Refrigerate until serving
