Pound Cake is a classic dessert that has been around for generations, when you combine it with the flavor of Key Lime, you not only have a classic, it is a refreshing and citrusy classic.
This is the perfect cake to make for any sort of celebration or just because you love the flavor! You only need one bowl, a few ingredients and a short amount of time.
Key limes are a step above the ordinary lime. It is as if nature gave the key lime an extra burst of flavor to make it a perfect citrus fruit. The flavor is slightly bitter, yet slightly tart and again is not the same as a regular lime.
This is not your ordinary Key Lime dessert, it is denser than your Key lime pie, and made into a pound cake that travels easier than pie.

The key lime is slightly bitter, more tart than a regular lime. The flavor is much more memorable and makes for a delicious dessert or treat.
Why is it called pound cake?
You would think that it means that the cake weighs a pound, however that is not the case. It is named pound cake due to the fact that you will use a whole pound of butter in the recipe.
What drink will pair well with this treat?
Truthfully, I am of the belief that any adult beverage will taste fabulous with Key lime desserts. Personally, I prefer a good Sangria or mojito to go along with a slice of Key Lime Pound Cake.
Ingredients:
1 pound Butter, unsalted, at room temperature
6 Eggs, large,
2 Egg yolks
3 cups Granulated Sugar
3 ½ cups Flour, all purpose
1 tsp Vanilla Extract
¼ cup Key Lime zest
⅓ cup PLUS 2 tbsp Key Lime juice
Glaze:
1 tsp Vanilla Extract
3 ½ tbsp Butter, room temperature
8 ounces Cream Cheese, softened
2 tbsp Key Lime Juice
3 tsp Key Lime zest
4 cups Confectioners Sugar
How to make Key Lime Pound Cake
Step 1. Preheat the oven to 325*
Step 2. Spray a 10 inch Tube pan or Bundt pan with nonstick cooking spray
Step 3. In a mixing bowl, beat the butter with an electric mixer, add in the sugar and beat for 5 minutes
Step 4. Add the eggs in one at a time, beating after each one
Step 5. Add egg yolks, one at a time, beating after each
Step 6. Add the lime zest and stir well
Step 7. Add the vanilla and lime juice
Step 8. Stir until well combined
Step 9. Pour the batter into the prepared pan and spread evenly
Step 10. Bake for 90 minutes, or until a toothpick comes out clean
Step 11. Remove from the oven and cool to room temp
Step 12. In another bowl, combine the butter and cream cheese, beat until blended well
Step 13. Add the confectioner’s sugar and blend well
Step 14. Add the lime juice, lime zest and vanilla, stir until well combined
Step 15. Spread the icing glaze over the cooled cake
