This recipe turns the lowly onion into a tasty and terrific side dish. One that is totally unexpected, but very welcome.
This dish is sliced onions in a creamy Parmesan sauce. The sweet onion combined with the savory parmesan is completely amazing. When you roast the onion first, it takes that bite out of the onion that would normally be there.
The onions are topped with cheese and sauce which makes it perfect. This is a hearty dish that is sure to satisfy all who taste it. This can be served as a side to basically any meat or as a vegetarian dish.
What type of onion is best in this dish, Sweet or not?
I will most often use Sweet onions, such as Vidalia. I slice them thin, but leave the rings together.
Can I add a bit of spice to this side dish?
Certainly, the Creamed Parmesan Onions can be spiced up a notch by adding Red Pepper flakes, or Cayenne Pepper.
What do I do with the leftovers?
The onions can be stored in an airtight container for 2 or 3 days in the refrigerator. They will remain fresh and can be reheated using the microwave.
Could I use yogurt rather than heavy cream?
I cannot truthfully tell you if that will work or not. I would imagine it could be switched out. If you try it, let us know how it works.
Ingredients:
3 Vidalia Onions, peeled and sliced thin
¼ cup White wine
1 cup heavy cream
4 tbsp butter, unsalted
1/2 cup Parmesan Cheese, grated
3 tbsp Olive Oil
1 tsp Garlic Powder
¼ tsp Cayenne pepper (optional)
Salt and pepper to taste
HOW TO MAKE CREAMY ROASTED PARMESAN ONIONS:
Step 1. Preheat the oven to 375*
Step 2. Lay the onions, complete rings flat in a 9×13 baking pan
Step 3. Drizzle with Olive Oil, season with Salt and Pepper
Step 4. Place the baking pan in the oven and roast for 15 minutes or until softened
Step 5. Remove the pan from the oven and turn the heat to 450*
Step 6. Combine the heavy cream, white wine, butter, cayenne and garlic, whisk well
Step 7. Remove from the heat and pour over the onions
Step 8. Sprinkle the grated Parmesan all over the tops of the onions
Step 9. Cover the pan with Aluminum foil and bake for 20 minutes
Step 10. Remove the foil and bake for an additional 5 to 10 minutes, until the onions have started to caramelize and the cheese begins to brown
Step 11. Remove from the oven and serve hot
