When the house has the aroma of warm cinnamon, that is the best smell for me. I love to make this cinnamon bread for that purpose alone. This recipe was given to me by a good friend, I did make subtle changes that fit for my family, just as you could do for your family with any recipe.
This bread is great for breakfast, for afternoon tea or as a snack in the evening.
This is actually a quick bread, but like any good quick bread it will take time. I never fully understood calling it a quick bread, except I do not wait for the bread to rise.
The unique way this cinnamon swirl bread is made reminds me of the Sunday morning Coffee Streusel Cake my Mom would make before heading to church. That is almost the exact smell too.
Can I add ingredients to the recipe?
I am not sure what you mean by ingredients. If you mean apples that have been cut, that would be fantastic. I do know some people who add cranberries and chocolate chips. Let your imagination rule.
How do I store this Cinnamon Swirl Bread?
The bread can be placed in a ziploc bag and stored on the counter or in the refrigerator. It will obviously stay fresh a day or two longer when kept in the refrigerator.
Can I freeze the bread?
You can definitely wrap this bread tightly and cover it a few times to keep it fresh and protected in the freezer. It can remain in the freezer for up to 4 months.
Ingredients:
2 ¼ cups All purpose Flour
¾ cup Granulated Sugar
1 tbsp Baking Powder
½ tsp Salt
1 ½ cups milk
3 eggs
1 tsp Vanilla Extract
6 tbsp Canola Oil
Cinnamon Swirl:
1 tbsp Ground Cinnamon
½ cup Granulated Sugar
2 tbsp Butter, unsalted and melted
How to make Raisin Cinnamon Swirl Bread:
Step 1. Preheat the oven to 350*
Step 2. Grease a loaf pan liberally
Step 3. In a bowl combine the flour, baking powder and salt
Step 4. In another bowl combine the milk, eggs, oil and the sugar and beat well
Step 5. Stir the dry ingredients in with the wet ingredients and blend until just mixed, do not over mix
Step 6. In a small bowl combine the melted butter, sugar and cinnamon and stir to combine
Step 7. Pour the bread batter into the loaf pan
Step 8. Using a spoon, drop spoonfuls of cinnamon mixture onto the top of the bread batter
Step 9. Use a knife to swirl the cinnamon mixture through the batter
Step 10. Place in the oven and bake for 50 to 60 minutes, until toothpick comes out clean
Step 11. Let cool for at least 5 minutes before slicing to serve
