If you are anything like me, I love breadsticks. They work perfect for almost any meal I serve. Whether it is soup, casserole, lasagna or spaghetti, there is nothing that compares to breadsticks.
They soak up the sauce, the broth and make the flavor of the dish even more enticing.
When it is harvest time, there are tons of zucchini that have grown and need to be used in some manner. These breadsticks are a unique way of using some of that zucchini.
Zucchini bread is one of my favorites, so I knew if I could come up with a breadstick I would be in culinary heaven.
You know what makes this perfect? It is the best way to stay KETO or low carb. AND, this is way tastier than many of those other bread recipes.
What makes this a special recipe?
There is no flour added, the breadsticks are made with egg, cheese and zucchini. The breadsticks are great for the waistline and taste terrific!
Why did my breadsticks come out soggy?
You do want them soft, however, not soggy. The best tip I can give is to be sure to squeeze out all the liquid from the zucchini before adding it to the mix.
Can I store these for later?
Tough question for a couple reasons. First, mine usually do not last long enough to have to store them. Secondly, these breadsticks are best when served fresh, right from the oven. If you do need to store them, I suggest wrapping them tightly and placing them in the refrigerator for up to 24 hours. Reheat in a toaster oven or microwave in short amounts of time.
Could I use Pepper Jack Cheese in place of the mozzarella?
Certainly, as long as the cheese melts smoothly, you could substitute any cheese. However, be sure it is a cheese that can melt without burning easily.
Ingredients:
1 egg, large
4 cups zucchini shredded, liquid squeezed out
⅓ cup Parmesan cheese, grated
1 ½ tsp Garlic Powder
1 ½ cups Mozzarella Cheese, shredded and divided in half
HOW TO MAKE CHEESY ZUCCHINI BREADSTICKS:
Step 1. Prepare the zucchini by shredding and draining the liquid off, squeeze to remove as much as possible
Step 2. Preheat the oven to 400*
Step 3. Line a baking tray with parchment paper and lightly spray with nonstick spray
Step 4. In a large bowl, combine the egg, Parmesan cheese, garlic powder and half of the cheese with the zucchini
Step 5. Stir to combine well
Step 6. Place the mix on the prepared baking tray and spread using a spatula
Step 7. Place in the oven and bake for 15 to 20 minutes
Step 8. Remove and cover with the remaining Mozzarella Cheese
Step 9. Return to the oven for 10 minutes, or until the cheese is melted and lightly browning
Step 10. Remove and slice into breadsticks
Step 11. Serve and enjoy with your favorite meal or by themselves
