Could I add meat to this soup?
Yes, you could, however, you must also understand that the soup will not qualify as a ‘zero’ point meal if you add meat or other ingredients.
Can I use vegetable stock instead of Beef broth?
Certainly! For those that avoid eating meat or meat products, it is a perfect plan to use vegetable stock as the broth. It is kept as a vegetarian soup.
How long does this soup stay fresh?
The soup can be kept in an airtight container in the refrigerator for up to 7 to 10 days. It is strictly vegetables, no meat and no dairy that would cause it to deteriorate or go bad.
Can this soup be made in advance?
This soup can definitely be made in advance. The ingredients within the soup will blend the flavors together as it sits.
Could I add additional vegetables to the soup?
I have actually added carrots, sweet potatoes and kale. The flavor boosted even higher than it normally is.
Ingredients:
3 cups Beef Broth
1 tsp Thyme, fresh
3 tsp Garlic, minced
Salt and Pepper if desired
2 tbsp Olive Oil
1 tbsp Tomato Paste
2 small Yellow Onions, diced
1 head Cabbage, medium, chopped
1 cup Tomatoes, diced
3 stalks celery, sliced
1 Red bell pepper, diced
1 yellow bell pepper, diced
1 orange bell pepper, diced
HOW TO MAKE CABBAGE SOUP DIET :
Step 1. In a large Dutch oven, heat the Olive oil over medium heat
Step 2. Toss in the onions, all the bell peppers, and the tomatoes
Step 3. Cook on medium high heat for 4 to 6 minutes
Step 4. Add in the Garlic, Thyme, salt and pepper, and the Tomato paste
Step 5. Stir to combine
Step 6. Continue to cook for an additional 2 minutes before adding the broth
Step 7. Add in the 3 cups Beef Broth
Step 8. Add in the chopped cabbage
Step 9. Increase the heat until it comes to a boil
Step 10. Reduce the heat to low,
Step 11. Simmer for 15 to 20 minutes
