Oh those memories of eating at the Grandparents house. My Grandma used to make the best foods. It seemed no matter what she touched, it turned into magically delicious food. There were never leftovers at dinnertime. Which was really sad because I always wanted some before I went to bed, when I stayed overnight.
It seemed that Grandma could take the food we hated as kids and make it into a meal that produced full bellies, happy memories and the desire to make the same foods for my family.
I swear though, even though I have Grandma’s recipe box, the food doesn’t taste quite right. I think there was a secret ingredient. My Mom always said add a cup of love to every dish you make. I think I know the secret ingredient now. My family loves the dishes from her recipes, it is only me that senses a difference in taste.
I am adding an extra cup of love and hugs from now on! Cabbage rolls always seemed like they took so much work, only to learn it really is not that difficult. All the flavors together must be what makes the perfect combination.
Can I freeze the leftovers?
Once you have let the food cool to room temperature, you can place it in an airtight and freezer safe container. It will remain fresh in the freezer for up to 3 months.
Do I have to use the rice in the meat mix?
The rice not only adds flavor, it acts as a binder to hold the meat together. Other options include oats, bread crumbs or cracker crumbs.
How do I get the cabbage leaves to roll so nicely?
The best method I have ever found was to place the head of cabbage in boiling water for about 8 minutes. I set the head in a strainer and when it cools slightly, I peel off the amount of leaves I need.
How do I store the leftovers?
You can wrap the remaining food tightly or place it into an airtight container and then into the refrigerator. It will last for up to 4 or 5 days.
Ingredients:
Tomato Sauce:
½ cup Yellow Onion, chopped
2 tbsp Olive Oil
1 tsp Garlic, minced
1 tsp Red Pepper flakes
28 ounces Fire Roasted Tomatoes with the juice
15 ounces Tomato Juice
1 tbsp Red Wine Vinegar
2 tbsp Brown Sugar
1 tsp Salt
1 tsp black pepper
Cabbage Rolls:
1 ½ cups Cooked Rice
½ cup Yellow Onion, diced
2 tsp Garlic, freshly minced
1 tsp Salt
½ tsp pepper
1 tsp cumin
1 tsp Italian Seasoning
2 eggs
2 pounds Ground Beef
1 head Cabbage
¼ cup Parsley, minced
Non stick spray
How to make Cabbage Roll Casserole:
Step 1. In a skillet over medium high heat, add the olive oil
Step 2. Toss in the onion and cook until the onions are translucent
Step 3. Add in the minced garlic and stir together with the onion
Step 4. Add in the Fire Roasted Tomatoes, tomato sauce, seasonings, Salt and Pepper
Step 5. Stir to mix and continue to heat to a simmer
Step 6. Add the brown sugar, red wine vinegar, continue to simmer
Step 7. In a large pot, boil water and add the head of cabbage, cover and boil for 7 to 8 minutes
Step 8. Remove the cabbage from the water and set it on a tray
Step 9. Peel 12 leaves off the head
Step 10. In a large bowl combine the hamburger, egg, rice, onion, garlic, salt and pepper and seasonings
Step 11. Stir to combine and mix well
Step 12. Lay the cabbage leaves on a flat surface
Step 13. Cut the thick part of the stem off the leaf
Step 14. Roll a portion of the beef mixture into a log shape and place in the center of the cabbage leaf
Step 15. Fold the sides of the leaf in, then roll the meat up like you would an egg roll
Step 16. Continue with the leaves and beef mixture until all the beef is used
Step 17. Preheat the oven to 350*
Step 18. Spray a 9×13 baking pan with non stick cooking spray
Step 19. Spoon half the sauce mixture in the bottom of the pan
Step 20. With the seam down, place the cabbage rolls in the baking dish
Step 21. Top with the remaining sauce
Step 22. Cover the baking dish with Aluminum Foil
Step 23. Bake for 90 minutes, until the cabbage is soft
Step 24. Garnish with Parsley
