This Old Fashioned Beef and Barley Soup is one of those with just a few ingredients. One thing to remember is that making a pot of soup at home is going to taste so much more flavorful than buying a couple cans of soup and adding water.
Can I use canned or frozen vegetables if I do not have fresh?
You sure can. Soups are also a great way to use the vegetables that are leftover from dinner. Soups help to clean the refrigerator once a week, if not more often.
Could I use Vegetable or Bone Broth?
Bone broth is an extremely beneficial type of broth. It is loaded with collagen which helps with the anti aging process.
How do I cook Barley?
The barley will cook in the broth, normally, you would use 1 cup of barley to 3 cups of liquid. Bring to a boil and then reduce heat and simmer until the barley is done.
Could I add additional vegetables?
You can use vegetables leftover from meals earlier in the week. You can add additional vegetables if you would like. You could add fresh or frozen or even canned.

1 Yellow Onion, chopped
½ cup Sliced Carrots
½ Green Bell Pepper, diced
1 can diced tomatoes
2 tbsp Olive Oil
2 tsp Minced Garlic
6 cups Beef Broth
¾ cup Barley
3 tsp Worcestershire
¼ tsp Thyme, ground
2 tbsp Red Cooking Wine
1 pkg Brown Gravy Mix
2 pounds Beef Stew Meat, cut into small pieces
Salt and Pepper to taste
Parsley to garnish

Step 1. In a large stock pot, heat the Olive Oil over medium high heat and put the meat in

Step 4. Add in the green peppers, barley, seasonings, carrots, diced tomatoes, and beef broth
Step 5. Add in the brown gravy mix, Worcestershire Sauce, cooking wine to the pot.
Step 6. Bring to a boil, then reduce heat and simmer for 50 to 60 minutes
